J K neraonal anneal for th more liberal
. 'use of potatoes by the people of the na-!
tion is oema tnaae ty Herbert C tioov- ' i
er. from whom Federal Food Adminis- fj
trator W. B. Ayer received a telegraphed j f
, request mis morning.
y' For some weeks Mr. Ayer has been
urging more liberal use of potatoes and,
through the cooperation of the baking
'. Industry, la endeavoring to have the
highest possible percentage used In
breads, lie has also sent out, for dis
, iplay in every retail store. large food
. administration" posters, urging . an ln-
-creased consumption of potatoes as a
"substitute for wheat. j
I' I cannot stress too emphatically the
importance of the use of more potatoes
' s at this time by every family and every
hotel, restaurant and other nubile eating
place In Oregon",'' said Mrj Ayer this
morning. "There is a national surplus
of potatoes which must be utilized before
4t goes to waste- and here In Oregon, be-
'cause of transportation difficulties, we
have an unusually large surplus. That
'this valuable food product may be util-
. lied, we should all eat potatoes at every
meal and bakers and housewivea should
use potatoes more liberally in bread. Ho
tels and restaurants should serve larger
- portions and wherever possible should
" include potatoes with other orders."
, Another: reason for Increased potato
consumption Mr. Ayer pointed out.; is
'the fact that the farmers who responded
to the food administration's appeal -for
maximum production are now facta- a
J substantial' loss. ' . " v
