BUTTER CREEK AND ROCK CREEK HOME OF

ERR fiRAHIUIl I BUTTER CREEK AND ROCK CREEK HOME OF li
Py Hvman H. Cohen.
Thar has ht-en much controversy dur
ing the paat two weeks regarding egg
trading, quality and handling mostly
coming from Interested parties on both
Idea of the fence.
Egg grading la certainly a necessity
In all markets because of the mixed
quality In which arrivals appear. Front
tract handlora have been grading eggs
for years hut not In the way prescribed
by the local board of trade In Ha latest
cruaadn.
There la no market on the Pacific
coast not even Including-San Francisco
that can successfully grade all egg
arrivals In throe or four grades It In
Impossible not from the standpoint of
Quality but because the markets are
loo small to admit of such proceedings.
It Is all well and proper to have a
strictly fresh egg and an ordinary
grade but this sort of grading has al
ways been carried out here and Iiub
proven Risuecess It Is the making of
jnore grnries mat manes me new rumiK
Impossible to carry forth In the lojul
market.
It Is Idle to presume that Front street
3oes not handle good eges for the
etrcet has been the source of supply for
almost the entire Pacific, northwest
these many years and none can say th.it
the peoplo have been eating unfit fond.
There nre two sides to the contro
versy regarding eggs. On one side are
"rrayed the ones who handle eastern
eggs entirely: the ones who handle
them almost exclusively. On the other
side you will find the commission men
who do practically all their business
In the local production.
The handler of eastern stock finds It
to his advantage to boost tho price
cf local eggs of which he sells fen
and In this manner gets most of th"
trade, for In the Portland market prices
generally tell. He will talk of the poor
quality of the local product for the
verv same rettson when ho knows full
weft that a hen lays tho snmo kind of
egg whether located in the east or
west or over In the orient. The quality
Is exactly the same.
By crying down the quality of the
local product and boosting up Its value
In an underhanded way. the seller
outBlde goods causes the local product
to remain a drug on the market. Dur
ing tho past week It was the custom
of these handlers of easrtern stock in
quote local eggs around 26 and 27c a
dozen whon It was Impossible for those
who received most of the actual local
leggs to secure over 2Dc and a large
per cent of the stock did not brin
over 24o. This result can be seen h
an examination of the books of the
Front street housos.
While the principal reason for out
ride handlers to boost local egg values
beyond their selling height was to rrct
rid of their large supplies of eastern
Rtok at a very handsome profit th.-.o
was still another reason, ana ft strong
one, too. For some time nn effort has
Vieen made In some quarters to take
away the egg trade from Front street
and If the eastern handlers can get the
uhlppcrs sufficiently disappointed itt
their returns from Front street they
will win out.
In this attempt the boosters were
aided by some newspapers likewise the
board of trade.

The fight Is over for
and wheat buyers nt
bidding one another so
were during the first few weeks of the
narvest.
The. principal fight was between the
millers and exporters- for control of the
trade and while the differences are far
from settlement at thts time, each side
seems to see no i'lcnefiia to itself from ,
continuing the war and giving t lie
profits to the producer.
The fight was Mrnply the att.-mnt
of a line of exporters to take most,
of this year's crop nut of the omjntrv.
while this stand was, of course,! op--posed
by the millers, who saw in 'this
mine export trade a diminishing of their
own power. !
At first the trouble was in blurstetn '
because one of the exporters sold some'
of this grade to foreigners while the
millers believed the bin. -stem rhivild all
remain at home because it was our best
wheat. The result was that the rnlMors
.ought the exporters when they at
tempted to fill their orders and In this
way sales of bluestern were made close
to the dollar mark basis of Portland,
'if course only one or two sales were
tnado at this extictne. but had the com
petition continued many more transac
tions would have been the result around
sky-high values.
I'uiitiR the past week cash wheat val
ues began to slide downward and for
the six davs they show a drop of fully
."c a bushel. '
Cash oats market Is very firm at
hieher prices because of the small of
ferings but there is some slight loss In
the price of barley.
Cm the Hoard of Trade there was but
little- change In the bids during tho
past week for wheat futures.
Hav market was quoted firm bv buy
ers because ef the smaller offerings
than anticipated hut the movement to
market Is showing con salerahle increase.
