-Very high prlcaa-' are' ruling in the
Poultry market, along Front atraet, ow-
Ing'to the -scant supplies during the
paat 10 days. Yesterday one Front
atreet handler received 18c a pound for
' a shipment of fancy dressed hens, but
me; general market zor areasea atoca
was around 16c. The great shortage.
' however, allowed "holdup" values to
' rule occasionally. For live chicks tha
feueral market today la 13 HO 14c, with
aney coops of hens ranging between
'. 14014c. Springs are In greatest de-
mann wiu nominal arrivals.
'' . Eft's Are Weaker.
A, weaker tone Is ahown In the local
- egg market. Receipts ara again Increas
ing ' and tha market generally stands
around 18a, although once In awhile a
single case may ba sold a fraction high
er. There Is quits a fair outside de-
- mand-for eggs at thla time, but had it
. not been for thla tha market here would
undoubtedly ba lower Juat now. Trade
In eggs Is .good, but even though con
sumption is increasing arrivals are that
.mucn neiier. :
: .'rotate Buslaess Is Setter.
. - There la a somewhat better movement
of potatoes to the southwest at this
time. -.Low prices have enabled tha lo
cal shipping trade to get rid of a por
. tlon of the. surplus at about growing
prices.
Onions are holding firm. The arrival
of Japanese onions is reported In this
, market. Southern markets are better
. because of the mild weather, which
causes tha stock to sprout very fast.
1'or this reason first-class onions bring
. a premium. Oregon quality Is, however,
much better than Japanese.
A -car of vegetables was reported In
this morning.
' Asparagua Is mora plentiful and
' prices are lower.
Another shipment of hothouse cucum
bers .from Illinois Is reported In by ex
. . press this morning.
After cutting out several cars of b
, Tianas. which formerly arrived in this
market weekly, the trade has decided to
Increase the present supplies by one
,j car a week. For some time there haa
' been a shortage because of tha scant
- arrivals. However handlers have made
the business profitable. Hawkers and
, Consumers ara tha ones to suffer.
t Brief Votes of tha Trade.
' Oranges are now being received here
' In 60-U hampers Instead of boxes. This
. mode of shipment Is more cheaply han
... died because of the elimination of box-
' packing. Quality or fruit Is fine.
Smelt run- is improving In the Lewis
:. river, but receivers do not expect run
' to continue long, as the Lewis river is
, Very hard to fish.
Demand for dressed meats is still
heavy. Price the same.
Surplus of halibut has been cleaned
tip and stocks in first hands are more
- firmly held.
i-Local wheat Is weaker' with some
? Quoting a loss of lc a bushel.
Hop bears are now bulling the mar

Discharged Employe of City
Park Puts Large Ax on
Grindstone.
A. Kullsh has been discharged from
the position of laborer In the city park,
upon recommendation of Superintendent
Montieth, but that does not keep him
from appearing before the park board
and telling the members that he can
jrove mat Monteitn diverted city iunds
lor private use.
Kullsh has become to be regarded as
a sort of perpetual Joke around the
city hall, and when he appeared before
tne park board this morning he was re
quested to file his charges against
Montelth In writing, which he gladly
consented to do. and the matter will be
taken up at the next board meeting
Kullsh claims that Montieth paid one
Frank Mi-Lean 65 out of city funds for
work performed In the cjly park last
April. Kullsh claims that he can
prove that McLean was doing private
work at that time, and waa not em-,
ployed by the city.
Kullsh also claims that Montelth
used fertilizer and other city property
for purposes other Uian those for the
city's interest, in met Kullsh has a
long string of abuses which he claims
were practiced by Montelth and wants
the board to know about them.
After the charges are reduced to writing-
the board will take them up for In
vestigation. Moat of these charges
were hashed out by the board about a
year ago, and it is the general opinion
that Kullsh Is trying to "get even"
with Montelth for losing his Job In the

Meats from home ranches are noted
for their flavor, the finished cattle of
Oregon being In every way up to the
best obtainable elsewhere, and at lower
prices, too.
Potatoes form one of the stand-bys
of Oregon and the quality of this state's
Burbanks, Early Rose and American
Wonder varieties causes them to be
shipped to every market where the
freight charges are not too discriminat
ing. Hand in hand with potatoea go
the Oregon onions, wnicn always sen at
an advance of 15c to 35c per hundred

the class.
.During the spring and aummer
months Oregon" produces a better line
of vegetables tnan does any other sec
tion and prices ruling in the markets
ara not high. Oregon cabbage is firmer
and heavier than the product of any
other coast state and this is the reason
why It, sells at higher prices than others
during' Its proper season. Cauliflower
is In the same class with cabbage, the
heads being compact and the taste Just
what you want.

the uregon-grown article is so zar aDove
that of tha southern state that the dif

Oregon 'grass is much sweeter than
that obtainable In the south.
There Is scarcely need to talk about
tha merits of Oregon apples, for their
fame la world-wide and the prices re
cently obtained in London were three
times as great as for other varieties.
Cranberries from Oregon marshes are
getting a reputation along the coast
and strawberries from Hood River and
the Willamette valley have no equals
anywhere. This much is conceded even
by competitors.
Eggs are getting cheap enough to
use. They are cheaper than meats,
even at the low price of the latter. At
25 cents a dozen they are In increasing

the small supplies. Farmers ara now
so busy with their spring farm work
that they do not take the trouble to
make frequent shipments to market.
For the Lenten season the markets
are better supplied with fish than ever
before.
Oranges are rather cheap because of
the larger supplies, so many people
are paying tne best prices for large
sizes when better quality could ba ob
tained in small irult ror less money.
Time was when we saved orange peel
to flavor custards and cakes. It waa a
good practice, and money Is saved on
flavoring extracts today -by the one
who has her Jar of dried orange peel,
lemon rind or peach leaves with their
bitter aimona taste.
A confection that pleases the chil
dren is candled orange peel. Soak the
peel of sweet oranges in cold water for
several - days. Scald it In the same
water, toss In a clean towel until dry,
and cut Into nice slsed little sticks.
Let these simmer gently In a rich
sugar svrup until the fruit is oulte
clear. Then lift from the syrup and
let get cold.

Floating Island Is one of the desserts
that take orange peel as a flavor. This
is a true egg custard. Use five eggs
to a quart of milk; beat the yolks, with
five tablespoon fula of sugar, and beat
light and smooth: brine tha mlllr tt ih
scald, lift frorri the fire and pour a
mue on tne beaten eggs, stirring all
the time; then add all to tha milk and
set back to cook. If you use a double
boiler it will be best The custard will
thicken slowly; have the whites beaten
to a stiff froth and drop them by the
spoonful Into boiling water, so there
will be a meringue, first adding a little
sugar to them. Stir the custard until
nearly cool, flavor and serve with the
whites on too. Decorate with rh.rri..
or canuy.
