appearance it la solid enough. But it

matter there Is also a scarcity of mois
ture. So the man who enjoys his sllee
of breakfast bacon, may comfort him
self with the reflection that he is get
ting fairly solid value for his money,
because bacon contains only 22 per
cent of water.
Fresh eggs, on the other hand, are
composed of no less than 63 per cent
of water.
Tho best dairy made butter, no mat
ter how carefully prepared, contains a
comparatively large percentage of wa
ter. Out of 1,500 samples of butter ex
amined by well known authorities a
small number contained over 10 per
cent of water. The larger number con
tamed between 11 and 13 per cent

the breakfast table may include a surw

per cent of water.

former. The daily nuart of milk, even
in its purest state, coutains an average
of 87.6 per eeut of water.
The choicest fish contains the largest
percentage of water. Thus turbot ami
sole are credited with "3 per cent
salmon 75 per cent, while the common
er Inhabitants of the deep blue sea are
content with from 40 to CO per cent, as
ln the case of the homely herring.
"As cool as a cucumber" la a house
hold term. The coolness is easily ex
plained. Cucumbers are almost entire
ly composed of water that Is, 95 per
cent, or over 7.4 per cent more than Is
contained ln milk, which Is Itself a Uq
nld. Lettuce must not be forgotten.
Here is a further Instance of bow little

It will be seen that most of the good
things of life are largely composed of
water, but it Is better for us that this
