ASTORIA Ths cured salmon Is used European countries, Mr. Wojtassewskl says, being handled thore In ths delicatessen stores. Ths extent to which the Industry has grown Is shown by comparison of the pack In years sines mi In that year about 300 tlero wers put up on the Columbia river, where the Industry has reached Its greatest proportions. This was the first year that any considerable amount was packed. Since then great strides have been made, and last year the pack of the Taclflc coast was about 13,000 tierce. This consumed over 10, 000.000 pounds of dressed fish, or about 7000 tons of salmon as taken from the fishing boats. It was divided about as follows: Columbia river, 8000 tierce; Sacramento river, 4000; Puget sound and British Columbia, 1000. During the last year or two the demand to the United States has also grown, and about a third of last year's pack was consumed in this country, the rest go ing to Europe. Beginning of Industry. The Industry was evolved from the practice of Columbia river salmon packers, begun about twelve years ago, of shipping frozen fish to Europe, where there was a large demand for smoked salmon, but a small supply of fresh flah. For several years the fish smok ers there used the frosen fish, thawed. salted and smoked them, but the pro cess did not prove satisfactory. Mean while, experiments had been made In packing In a light brine, and packers had arrived at a process for preparing that Is now known as mild cured, or pickled, salmon. By this process, as described by J. R. Mason, superlnten dent of the Pacific Cold Storage Com pany. the fish are packed In a light weight brine, giving there JuHt enough salt and retaining all the juice and flavor. After being held In cold stor age for eight or ten months, they are still almost fresh, and a nice cure will give them a very rich flavor when properly smoked. In packing only ths largest fish are used, those weighing over 30 pounds, a great many being packed that weigh over 80 pounds. The largest fish bring the best prices, ss the large aides make a thick slice when cut up and do not dry out too much In the process of smoking, which usually requires two or three days, and should be done to produce the best results In or near the place where consumed. It Is said to be the very best of the salmon busi ness and sells for more than any grade of frozen or canned salmon. This Yssr-s Psck. Thus far, It Is said, ths catch on the Columbia river Is lighter than a year ago. The season there opened April 13, and while there has been a fair run of small flsh, large ones have been fewer and a smaller quantity of fUh have bsea placed in cold storsgs. On Puget sound, also, ths ran Is light sad cannot be said to have begun. Hardly enough fresh salmon have been j secured for ourrent demand. It Is ear- ly yet, however, to expect them In large quantities and canneries are not open. There Is still a difference of opinion as te ths else of ths year's pack, some claiming that ths ran will bs a good one, and ethers, perhaps a majority! holding that it will bs light, following ths rale of ths fourth year snotag.
