PAGE SIX ASHLAND TIDINGS Monday. June 0. 1013. I Home Maker I EDITED BY ALICE P. TALCOTT. A'Woman and a LnI)-. (By Ella Wheeler Wilcox.) What is the distinction, asks a correspondent, between "a woman" and "a lady"? "It seems that every lady is a woman, but not every wom en a lady." Webster tells us that the term "lady" is derived from two words, meaning bread and helper. His def initions are therefore: 1. "Bread helper." "A mistress of the house." 2. "A woman of social distinction. In England a woman whose husband is not lower than a knight in rank, or whose father was not lower than an earl." 3. "A woman of gentle and re fined manners." "A wife or spouse." In America, the land of freedom and "equality," the word "lady" is much misused. We all know the true story of the mistress of the house who was met by the inquiry, "Are you the woman that advertised for a wash lady?" "Wash lady" and "sales lady" are terms now in general use by the un instructed. The impression seems to prevail among the ignorant and ambitious that showy garments and a disdain for labor produce a "lady." In England the term "lady," as will be-seen by Webster, is a distinct title. It has its special application, the same as duchess or countess. Lady Blank may be ignorant and ugly and untidy and impossible as a woman yet she is Lady Blank by legal right, If her father's or hus band's rank so makes it possible. In America we nave no titles, and the cultured and intelligent mind un derstands that the word "lady" is only applicable to one to whom Web ster has given the third definition: "A woman of gentle and refined manners." She may be a laundress, a house maid, a salesgirl, or an object of charty but if she is possessed of gentle manners and a refined deport ment it Is absolutely proper to speak of her as "a lady." If she is loud-voiced, vulgar in speech or in dress, obtrusively ignor ant, or rude, she is not a lady, no matter if she is born and reared in wealth and if she sparkles with jew els. " She is a woman who has misused her opportunities of becoming a lady. A woman" whose wealth has made her name a familiar one in two con tinents recently entered a fashion able shop in New York in an unmis takable state of intoxication, and dis gusted the proprietor and salesmen by her rude and boisterous manners. She is not in America a lady. She would of necessity be one in England if her father had been an earl or her husband a knight. It savors of the ridiculous to ap ply the term "salesladies" to all women who are employed at mer cantile counters. "Chorus ladies," "wash ladies" and "shop ladies" should understand that the word is offensive and absurd when thrust upon the listener. It is not necessary for the "lady" to label herself. She is easily dis covered. And if she is not there the flimsy label only makes her ridicu lous. The , word "woman," with a prefix, is much stronger than the same prefix with "lady" attached. A splendid woman, a noble woman, a lovely woman, has tenfold the strength of "a splendid lady" or "a lovely lady." The term "a fine wom an", is full of dignified meaning, while "a fine lady" suggests the gaudy butterfly. A sales woman" means one of the world's worthy workers, while a "sales lady" means nothing at all. COO KING HINTS. To preserve the flavor of peas, cauliflower or asparagus, add a little of the water in which the vegetable was cooked to the cream or white sauce. I use condensed milk, dilut ing it one-half. Condensed milk may also be used to advantage in making milk gra vies. After the flour haa absorbed the fat, pour in hot (but not boiling) water, stir till thick and dilute to the proper consistency with the milk. I have found condensed milk much more economical and conveu- 1 THE PORTLAND HOTEL Slxih, Seventh, Morrison and Yamhill Streets PORTLAND, OREGON T The most central location in the city, and nearest to the leading theaters and retail shops. Even if one uses fresh milk for most purposes it will be. found convenient to have a can or two for emergencies. Uses of Kerosene. Having tested the efficacy of a rag dipped in keresene in cleaning sink, bathtub and lavatory, I tried It on zinc and woodwork and was delighted with the result. Soot from kettles, grease and even dirty water specks, which are the hardest of all to remove, disappeared as if by ma gic. ' I used it in all my houseclean ing this spring and found it a great saving of time, strength and also paint, as the latter was often re moved by the old scouring process. Don't let anyone fool you by attract ive representations of powders or scouring soaps. Try kerosene. It is equally effective in cleaning soiled spots on furniture and a little in the water used for washing windows is a help. I also put two tablespoon fuls in the boiler when scalding the clothes after soaking them over night in cold water. Saving Fuel. If one has a flat-topped heating stove a good deal of fuel may be saved by cooking lunch or supper on it. I heat my tea water in the lower part of the double boiler, and if I want a hot dish, cook It in the upper part. Arrange to bake bread, cakes, pies, beans or meat or to make soup or stew when you iron. When your fire gets well agoing close all drafts and your ire will last much longer. The mornings are usually cool here, even during the hottest weath er, so I have found it a saving of both the fuel and myself to do my cooking for the day during the heat ed term, on my wood range early in the morning. The vegetables for dinner may be re-heated on the oil or gas stove in a few momenta. I dispensed with roasts and stews and had fried meat instead, as it could be cooked while the vegetables were heating. Dessert was served cold. iLoups and. hot drinks were dispensed with. A few slices of roast were oc casionally bought at the delicatessen store, when a change was desred. Put a pan over your flatirons when heating them on an oil stove or gas stove and they will heat more readily and thoroughly. To keep food hot on an oil stove, while waiting or a meal, turn the burner as low as possible and set over it a pan of hot water containing the dishes of food, or set the food in the oven over a burner turned low. If you have work to do which re quires a fire, let other work go and attend to that, so that it may not be necessary to keep a fire in the range in the afternoon. Some women let the washing, Ironing, canning and baking occupy the entire day, thus exhausting themselves and wasting fuel. Teachers' Examinations. Wednesday Forenoon. Writing, U. S.
