TTTTTTTTTTTTVTTTrTTTTTTTTT
The I)esMtiNni of the Juniors.
I wonder why we so often forget
that the older children are as much
to be considered and as carefully
guarded as .the little ones who are
not yet very far from babyhood?
Your boy of 12 or 14 is drawing a
map that must be taken to school
the next day. He is preparing a les
son that requires close attention. He
is writing his theme and not finding
his task easy. Along comes the little
brother. He tries to climb upon the
big brother's knee, he snatches a pen
cil and makes a mark upon the map,
or he insists upon interrupting the
home work of the older lad by lfttle
forays and dashes and requests for
a story, until the patience of the
older boy is exhausted. Repeated
efforts to send the little one away
prove futile, there is finally a scene
and a skirmish, rough words are
spoken and the smaller one begins
to cry and goes with a grievance to
his mother. Three times out of four
the mother catches up the little one,
kisses antl hugs him and reproves her
older child for his ill behavior. He
nas not behaved 111 and his right to
do his work in peace has been in
vaded, but for him there is no sym
pathy. A girl of 10 or 12 is generally wil
ling to assist in the care of the
younger ones of the family. She
helps them to dress and undress, de
votes a good deal of time to them
! and is her mother's affectionate aid
in their upbringing. It is not to be
expected that she shall invariably
wish to take little Ruth or Jimmie
with her everywhere and it is right
that she should have some time to
call her own and to be at peace when
talking with her friends of her own
age. The little children do not mean
to be tyrannical, and would not be if
they were not given to understand
that every one must 'yield to them
the instant they appear. After a
while, if other babies arrive and they
are deposed from sovereignty, they
are sometimes very much surprised.
In the ideal home a system of mu
tual helpfulness reaching around the
circle ' binds the household together
in perfect harmony. The little ones
have an undoubted claim on the
caresses, the care and the loving pro
tection of those who are older. This
being admitted, it is for the parents
to see that the older ones are also
immune from interruptions that hin
der them from the work that they are
daily obliged to do. Margaret Sang
ster in Mothers' Magazine.
E VERY-DAY RECIPES.
Economical Cookies.
These delicious cookies without
eggs, butter, cream or milk are a
boon to the economical housewife.
This is a good recipe for the chil-
! dren's school lunch. One and one-
half quarts flour, two. heaping tea
spoonfuls of baking powder, one cup
of lard, one cup of sugar, one cup
of currants, one-half nutmeg. Sift
the baking powder with the flour,
rub the sugar and lard in the flour,
then mix in the currants and nut
meg. Mix to a firm dough with cold
water, roll about as thick as pie
crust, sprinkle with sugar and cinna
mon and cut out and bake in a brisk
oven.
"Never-Fail" Biscuit.
Four level cupfuls flour, four
scant teaspoonfuls baking powder
and one teaspoonful salt. Sift three
times and work in a piece of lard the
size of a large egg. To one pint of
sour or buttermilk add one very scant
teaspoonful of soda. When dissolved
pour as much into the flour as Is re
quired to make a soft, smooth dough
(some grades of flour require more
wetting than others). Pat or roll to
one Inch in thickness; cut into small
biscuits and bake in a quick oven. A
little melted lard rubbed over the
biscuits before putting into the oven
makes the crust very tender.
Mincemeat Pickles.
Chop finely one peck of green to
matoes, drain and add two table
spoons each of salt, cloves, cinnamon
and allspice, two pounds of well
cleaned currants, two pounds of
seeded raisins, half a peck of peeled,
cored and chopped tart apples, six
pounds of brown sugar and one cup
ful of cider vinegar. Cook all to
gether slowly for three hours then
can while hot in glass jars. This is
a most delicious pickle to serve with
meat. Put between thin slices of
buttered bread; It makes an appetiz
ing sandwich. Half or quarter the
quantity can be made.
Celery and Rice.
Here is a" combination dish that is
j suitable for a supper dish for chil
dren and Is liked by grown-ups, es
pecially when Berved with a browned
meat stew: Cut the best part of a
bunch of celery into small pieces and
cook in plenty of water about a half
hour before adding the rice. The
proportions should be about one part
of rice to two of celery. When done
season with salt, butter and a half
cup of rich milk or cream. Mrs. F.
M. Carnahan, Fellows, Cal.
Delicious Potatoes.
Peel medium-sized potatoes and
lay in a lightly greased baking pan;
sprinkle with salt and lay in a thin
strip or two of ham or bacon fat over
them. Bake about 45 minutes, or
until brown and cooked through.
Sweet potatoes or crook-necked sum
mer squash may be cooked the same
way and with delightful results.
Annie L. Rose, Surrey, Cal.
Bachelor's Hot Cakes.
One cup of buttermilk, one cup of
flour, an egg well beaten and one
half teaspoonful soda. Salt to taste.
Bake on a hot griddle.
Green Tomato Pie.
Line a piepan with a rich crust
and spread over it layers of sliced
tomatoes that have been peeled like
an apple, half a cup of sugar, one
tablespoon of vinegar and a little
flour. Drop little lumps of butter all
over it to make it rich and juicy and
flavor with lemon or nutmeg.
HOUSEHOLD HINTS.
Ego of linking Powder Can.
I am excellent for steamed pud
din us. If you use me you will have
cause to congratulate yourself upon
the appetizing 'appeaarnce of your
desert and the ease with which it can
be served.
I am just the right size for cut
tins out the biscuit dough for turn
overs. I have a sharp edge and am
easily handled. I am extremely good
to bake bread in, providing you
without trouble, with crustless slices
for sandwiches.
I am a good burnt match receiver.
Punch a hole near my rim, suspend
me on a hook below the match box
In the kitchen and prove for your
self that I am convenient, easily
emptied and always look neat.
I am a perfect mold for jellies,
veal or chicken, the round slices lend
ing themselves readily to effective
arrangement on the platter.
I am quite as satisfactory for
pressed beef or potted fish.
Ilrooniholder.
Fasten two spools of the same size
to the wall by driving large nails
through the holes. Place them two
inches apatr, then turn the broom
handle down, letting the brush part
rest between the spools. This is very
simple and lasts for years and keeps
I the broom straight.
To Keep Rice From Sticking.
Wash the rice in clear water until
it doesn't make the water look milky.
Then put in fresh water with enough
salt to taste and cook. The rice will
not stick and will not have to be
stirred. If tried, you will find it a
great help.
To Clean Silver.
Boil two quarts of potato parings
in one quart of water for ten min
utes. Remove the parings and put in
as many knives, forks and spoons as
the water will cover and let them
boil for ten minutes. Your silver
will come out like new.

The Woman Makes the Home
She makes it best who, looking after the
culinary department, turns her back resolute
ly upon unhealthful, or even suspicious, food
accessories. She is economical; she knows
that true economy does not consist in the use
