Eggs are among the most difficult OA food products to grade. This Is because each egg must be considered separately and because the actual substa&oe of the egg cannot be exam ined without destroying the egg. From external appearance eggs can be selected for size, cleanliness of shell and freedom from cracks. This is the common method of grading In early spring, when the eggs are uni formly of good quality. Later in the season the egg candle Is used. In the technical sense any kind of a tight may be ueed for an egg candle. A slxteen-candle power electric lamp Is the most desirable. The light Is Inclosed In a box or tin cylinder. In which are made openings about the size of a half dollar. The room be ing darkened, the candler holds the egg to the light, large end upward, and gives it a quick turn In order to view all sides and to cause the con tents to whirl within the shell. To the expert this process reveals the actual condition of the egg to an extent that the novice can hardly realize. The art of egg candling can not be readily taught by the worded description. One who wishes to learn It had best go to an expert, or he may begin unaided, and by breaking many eggs learn the esentlal points. Eggs when laid differ considerably in size, but otherwise are a very uni form product. The purpose of the egg In nature requires that this be the case, because the contents of the egg must be so proportioned as to form the chick without surplus or waste, and this requires a chemical composition that varies but slightly. For food purposes all fresh eggs are practically equal. The tint of the yolk varies somewhat, being more yellow when green food has been sup piled the bens. Occasionally when hens eat unusual quantities of green feed the yolks show a greenish brown tint and appear dark to the candle. Such eggs are called grass eggs. They are perfectly wholesome. This is true enough of commercial eggs, but the difference Is chiefly, if not en tirely, due to external factors that act upon the egg after it Is laid. ' The flavor or odor of an egg may be noticeably Influenced by the feed x the hen. This has been demon- itrated by feeding hens heavily on onion tops or garlic. "The Rocky Ford melon Is one of the older varieties of melons which In the environment of Rocky Ford. Colo, has attained particular excel lence. The same remark applies to the Indian river oranges of Florida. They are not a new variety, but various varieties which In the environment of the Indian river have attained unusual excellence." This Is a remarkable decision. There is no reason why melons from any other section should be sold upon the reputation of the Rocky Ford melons. they will establish a reputation of their own: if they are not as eood they don't deserve it. and should not be permitted to pass under false col ors. Fruit growers generally should take note of this decision for it will apply to every other similar case where packages have been marked with a geographical name. Sell your products for what they actually are by so doing you will es tablish a reputation of your own and will not be dependent upon the repu tailon of others. .Rid Your Garden of Grub Worms. Under no circumstances should von nse the same garden spot again until you have rid the sou of the worms and grubs. To do this plow the land, roll, drag and roll again to hold the moisture so all weeds will start to grow. Then give it another thorough working. In September go over the ground again, making sure all weeds are de stroyed, and next spring you may again uss the space for a garden.
