Savory Roaat.
One pound of beefsteak (flank steak
may be used), two tenspoonfuls of
flour, one scant teaspoonful of salt, one
saltspoonful of white pepper, one-half
pint of cold water and one-quarter
pouna or Deer kidney. Mix the flour,
pepper and salt together on a plate; cut
up the meat Into tutu slices, also the
kidney Into pieces: din thein in the
flour and roll up; place thera In a bak-1
ing dish, add the water, cover with pas
try and bake In a good oven. Mush
rooms, olives or oysters may be added
for a specially fine pie, and with this
combination a good puff paste should be
ised as cover.
Oil Fickle.
Slice 100 small or medium-sized cu
cumbers without peeling. Lay In salt
three hours under weight (salt to
taste); drain, add three pints of small
white onions, sliced, a piece of alum
the size of a nutmeg, dissolved In hot
water, three ounces of white mustard
seed, three ounces of white ground pep
per, one dunce of celery seed and one
pint of olive oil. Mix all thoroughly
and cover with cold cider vinegar. '
Honitnr Drop Cake.
Heat In a farln kettle one pint ot
boiled hominy broken into grains as
lightly as possible with a fork; heat
two.eggs separately and stir the yolks
Into the hominy with one tablespoonful
of water and one-half teaspoonful of
salt; then add the whites. Drop in
tablespoonfuls on buttered tins and
bake to a golden brown in a quick oven.

Cream Scones.
Two cups of flour, three teaspoonfuU
of baking powder, one-hulf teaspoon of
salt, one-quarter cup of butter, two
eggs, one-half cup of cream. Mix as
baking powder biscuit, adding the beat
en eggs with the cream. A diamond
shape Is attractive for scones. Bake
on greased tins In a quick oven. Serve
with chocolate for luncheon.
Celery Saoce.
Cut the -stalks of a bunch of celerj
very flue, cover with hot water and let
stew an hour. Mix three tablespoon
fuls of melted butter with two table
spoonfuls of flour ; add to the celery a
pint of thin cream, stir in the butter
and flour, season with salt and white
pepper. Serve-wlth duck, roast or boll
d fowl.
Steamed Sqnnah.
Cut tbe squash Into pieces and so rapt,
out the seeds and stringy part. Place
In a steamer over boiling water, cover
closely and cook until tender. When
done, remove from shell and wash. To
each pint allow two tablespoons butter,
one level teaspoon sugar and salt ard
?epper to taste.

Quarter and stew twelve tart applet.
Rub through ft sieve and lo each cup
ful of tbe pulp add a cupful of sugar,
one-half cupful of melted butter, Juice
and grated rind of a lemon, one cupful
of milk ami three eggs, and half of a
nutmeg. Beat oil together. Bake In
one crust aa custard pie.
Layer Cake.
Cream a lump of butter tbe size ot
an egg with one cup of sugar. Bent
three eggs light and odd them to the
sugar and butter mixture, and work In
a cup of flour sifted with a teunpoon
ful C'f baking powder. Buke In two
layer tins.
