first ian where thev are evaporated at a
vacuum represented by a olumn of S to

Tho steam with whk'h this evapora
tion is effected is usually the waste
coming from the engiues and pumps of
the factory. The vapors generated in
the first pan eater the heating pipes of
the second one, and are thus utilized in
evaporatiug the somewhat .concentrated
eyrap which is drawn off from the t! rat
pan into the second one, where the
vacuum is higher, being represented by
a column of from ! to S inches in
height. The vapors which are produced
in the second pan are in like manner
conveyed to the heating pipes of a third
- apparatus, where the still more contra
ted syrups from the second ,'pan are con
ducted and evaporated at a still higher
vacuum of from '22 t -0 inches cf mer
cury. Some times a fourth pau is em
ployed. The La Grande factory has
four evaporating pans 12 by 14 feet and
about 12 feet high. Each evaporator
has two aud one-half miles of half-inch
copper pipe for conveying steam and va
por.
"It is easy to see by tho arrangement
above noted that the evaporation of the
thin diffusion juices to a heavy gj rup is
accomplished with the greatest econo
my, steam being admitted only into the
first pan, and the rest of the operation
being automatic, aided only by the
pumps producing the vacuum. The
syrups thus produced are convertei into
sugar in the following manner:
"A portion of the syrup is placed in
an apparatus called the ttike pan.

coils, one above the other, to which
steam can be admitted at will. Tho ad

these crystals are made to grow. As the
pau becomes full successive coiU of the
steam pipes are brought into use, so
that the boiling surface of the pan is
gradually increased in proportion to the
yolume of its contents. Iu course of a
few hours the skilled sugar-boiler will
find that the pan is full, and that the
crystals have grown to the proper size
The mass in the vacuum pan at this
stage is extremely heavy, consoling of
dome mass of sugar crystals mixed with
a iuanity of molasses greater or less in
amount, as the juices from which the
sugar is made are more or less pure.
In boiling sugar in a vacuum pan, if the
highest possible yield is desired and no
objection arises to the formation of soft
crystals, a very high vacuum, equivalent
to 29 inches of mercury at the sea level,
is employed. If harder
crystals, giving a somewhat kss yield,
are desired, as in the case of makirjg
ranulated sugars, a lower vacuum,
namely, from i to '2 inches id em
ployed." (The vacuum pan of the La
Grande factory lias a capacity of 2"0
sacks of sugar equal to 12.5 tons, and
will be opsiated with a vacuum o! 22 to I
24 inches.)

The centrifugal are circular tanki re'
volying with great velocity. There are
eight of these centrifugal in tne La
Gran Je factory. They are 40 inches in
diameter and revolve at tho rate of 1000
revolutions per minute.

lasses lo pass outward under the im
pulse of the centrifugal motion, while it
retains all the crystals of sugar e.cupt
those flim enough lo ho ont rained with

Judge I. II. Kiy and wife left Monday
evening for Ashland aud other South
ern Oregon points. Mr. Uay will be

John Sutherliu, who has been iu the
employ of the Portland Cracker Co.,
haa returned. Duriog his brief stay
with them, the company shipped 12 cars
of hardtack. The product of this fac
tory will go to Manila.
On last Friday Dr. W. C. Gilmour was
called to Elkton to attend to T. L. Jones
who is sufferiog from acute conjunctivi
tis. Dr. Gilmour returned to Oakland
with his patient Saturday, who is im
proving under the doctor's care.
Un last Sunday Dis. Page and Gil
mour operated on Roheit Phelau who
was run over by a wagon a fortnight
ago. It was found that the outer table
of tho skull had been fractured and that
Mr. Phelau had been more seriously in
jurcd then was at first supposed. The
injury was not examined by a physician
at the time of the accident.
On Monday on complaint of Louie Lab
terellc, L. Thornton appeared in Judge
Coviugdou's court, cl.argcd with malic
louBly shooting a burr'-, the property of
complaintaut. Thornton plead guilty to
shooting the hor.e, but claimed the ani
nial was vicious and dangerous. After
hearing the statements of each party,
Judge BovingJon assessed a Guo of f 10
against Tboruton.
