Agricultui:. A California pnper
devoted to mining and scientific
pursuits, thus tacitly acknowledges
that, after all, agriculture is the source
of the real wealth of the people :
" Heretofore it required nearly the
entire product of our mines to feed
and clothe us : but now, by ireans of
cur increased agricultural yield, wc

whereby our material wealth is being
rapidly increased." Agriculture has
been aptly termed the steward which
spreads the daily table of mankind.
And what a table is being presented
lo us of the Pacific const ! a demand
to which the valleys of Oregon must
by and-by respond. Let us plow
wider and broader ; let us multiply
our granaries, and heap them to the
Brim let the idle loiterers in our city
streets lay hold of the plow and tiie
reaper, and transform their' keble

.arms and sunburnt faces; let them
drop the yellow grain into the earth,
and by-and by they will reap a golden
harvest, richer and more easily gained
than the miner wrests his glittering
grains from the flinty rocks of our
mountain heights.
Southern Ixdustiu. The State of
North Carolina ha3 1,500,000 acres
of swamp lands that remain public
property, sitnjJy because, under the
old regime, iio one supposed them
worth owning. These are of course
by far the richest lands in the State,
and most of them are covered by
timber, now inaccessible, which
would of itself repay the cost of drain
age. The State has now devoted
these lands to the cause of education;
and companies are being formed to
drain and sell them in small tracts to
settlers and cultivators. In many
cases, these swamps have been rc
ceivinr and retaining the wash of
the higher lands around them until
they are "rich as mud1' to the de th
of ten and even twenty feet, and
.would crow heavy crops for success
sive years of the most exhausting
plants hemp, cio'oacco, Indian com
without seeming at all impover
ished. Such swamps are common
throughout the South, and have been
very Tartly and slightly improved.
A Keceipt Worth One Thou
sand Dollars. The Ohio Cultiva
tor says : Take one pSund of sal-poda
and half a pound of slacked lime,
put them in a gallon of water and
boil twenty minutes, let it stand till
cold, then drain off and put in a small
jiig or jn ; soak your dirty clothes
over nignr, or until they are wet
through, then wring them out and
put on plenty of sonp, and in one
boner of clothes well covered with
water, add one teacup of the washing
fluid, boil half an hour briskly, then
wash them thoroughly through one
suds, rinse, and your clothes will look
bettor than the old way of washing
twice before boiling. This is an in
valuable receipt, and I want every
poor woman to try it. I think with
a patent wash tub to do a little rub
bing, a washerwoman might take the
old bible and compose herself on a
lounge and let the washing do itself.
Antidote for Liquor. A corres
pondent of Forney'' s Press says: " I
am accustomed to the use oi ardent
spirits, and wish to stop drinkinc;
what shall 1 do V The answer is :
We Gnd the following cure presented
in Chase's remedies : Make a tea of
bay berry baik, 2 lbs.; htmlock bark,
1 lb.; ginger root, 1 lb.; cayenne p.p
per, 2 ozs.; cloves, 2 czs.; all finely
powdered and well mixed. Dose
one half of a teaspoonful of it and a
ppoonful of sugar; put them into a
tea cup and pour it half full of boU
Qing water let it stand a few minutes
asui then fill the cup with milk or
boiling water, as may suit the taste,
and drink freely.

Tin? Father of Orphans. Geo.
M. Mailer, the renowned founder of
the Orphan Establishment, Bristol
England, has received and expended
$2,750,000, every penny of which
was sent voluntarily, and without so
licitation. He has 1,200 orphan chil
dren under his charge, occupying five
large stone houses, each distinct from
vthe others. He lives in the simplest
style, and does not allow himself a
lounge, or a rocking chair, unless he
is sick.

HOUSEHOLD RECIPES.
Rye Cake. Three cups cf rye
meal, three of corn meal, a little salt,
one small teaspoonful of grated nut
meg and ground cinnamon, mixed;
then add as much miikas will make
a thin 1 atter; bake on the griddle;
serve hot.
Potato Cake. Buil with care four
good potatoes, press them in a dry
towel, peel and mash them smoothly
while hot ; when milk warm, stir in
a spoonful ot butter and a little salt;
kne d in as much flour as will make
a dough like rolls, add a wineglass of
good yeast ; set it fo rise, then make
them into small cakes and lay on
tins. Bake a nice brown.
Succotash. Cui off the sug-ir-corn
from tli2 cobs, put the cobs into cold
water to boil for an hour, then take
out the cobs, and put into the water
fome Lima beans and the corn, let it
boil thirty minutes ; there should be
at first only water enough to boil the
cobs and make the succotash, as too
much loses the flivor of the cob ; then
stir in a spoonful of Imtter, a cup of
cream, and a little salt. Let it stew
for five minutes, dish and serve hot.
Choice Salad. A salad, such as is
generally liked, is made with the
yolk of an egg, much oil, a very little
vinegar, salt to the taste, and with
mustard and pepper sparingly and
carefully mingled. The oil should
be very slowly poured upon the egsr,
(ar.d mustard, if used,) and elabor
ately worked in with a spoon. Feed
it with oil so Ion" as it will take. If
you beat long enough ou can add a
great quantity of oil before the mass
will lose its creamy, rich consistency.
When, in spite of all beating.it begins
to be oily, you have oil enough.
Liaison Salter. This celebrated
sance, for thickening and enriching
soups, is made as follows : Pour the
soup, boiling hot, on the beaten yolks
of two or three fresh eggs, from which
the small, tough substance found in it,
and called "the thread, should be re
moved, nor should the soup be suf
fered to boil after the eggs are added,
as it is then apt to curdle. Or else
break the yolk of an egg with three
spoonsful of cream, beat thera up in
the tureen, and pour the boiling soup
upon it. This is a liaison against
w hich scandal cannot utter a syllable.
"Sauce Royale.,t This celebrated
sauce, which is ratlier a relish than a
sauce, is made as follows: Cut a
slice of white bread, and stew it in
white broth, until it is quite thick
then take it off the fire, pound in a
mortar the yolks of two hard boiled
eggs, and half a dozen almonds rc-
duced to paste with the breast of a
cold, roast fowl : mix this with the
ejnis and bread, and pound them oil
together with a little pepper and salt.
Add enough cream to make it of the
proper consistency, and simmer the
whole over the fire, stirring it all the
time without letting it boil. This
style of sance may be greatly varied,
by the exercise of a little ingenuity.
Mali n a Pic. Take cold mutton or
veal, chop it very finely, then to one
pint of minced meat stir in the yolks
of four well beaten egs, the juice of
one lemon, and the rind thinly grated,
two small onions very finely chopped,
half of a grated nutmeg, two large
spoonsful of mushroom catsup, a very
little cayenne, and salt to the taste ;
mix this well together, and cut up
into very small pieces a half quarter
of a pound of butter, and stir through
it ; then line a dish with good paste,
and put this in to bake until it is a
nice brown ; serve with a nice gravy
made of the bones of the cold meat.
Doughnuts. Take one pint of
warm milk, cut into it one fourth of
a pound of butter, four eggs well
beaten, one pound and a half of
brown sugar ; stir the sugar into the
e"irs, grate half a nutmeg ; mix these
all well together thicken this into a
good soft batter with sifted flour, add
a little salt, beat this well, then add
a wineglass half full of good brewer's
yeast. When quite light, have ready
some boiling lard, and drop in the
doughnuts. Fry a nice light brown,
put them in a cullender while hot to
drain, then sift sugar over them.
Rich Croquets fur Meats. Wash
and scald a quarter of a pound of rice
put it into a saucepan with half a tea
spoonful of salt, some very thinly
pared lemon-peel, a tablespoonftil of
butter ; on this pour one pint of cold
water, half a pint of new milk, and
stir it well for a moment only, then
et it in a hot place to cook slowly;
when the rice becomes quite soft re
move it, and stir in the welNbeaten
yolks of four egg?1; do not allow this
to cook, but keep it hot w hile stirring
in; then pour this on a tin sheet or
fiat surface; spread it out equally, and
let it coo!; then divide it in portions
two inches long and one inch wide,
roll these into scrolls or oblong balls;
dip each one into bread crumb!, and
fry tlu-m a nice brown serve hot.
Red Cement. "Red Cement," em.
ployed to make glass adhere to metal
and one of the most useful kind
is made by melting five partsof black
resin, one part of yellow wax, and
then gradually stir in one part of
yellow ochre or Tenitian red, in fine
powder, and previously well dried.
This cement requires to be me! ted
before use, and it adheres better if
the objects to which it is applied are
warmed. Lime cement is of great
adhesive power, and is made by
slacking some freshly burned lime
with a little boiling water. The
white of an egg should be intimately
and thoroughly mixed by beating
with its equal bulk of water, and the
slacked lime be added to the mixture
so as to form a thin paste. This sets
very hard, and resists boiling water.

The difference between their manufacture
and the European, is briefly this : European
Watches are made almost entirely hi hand,
and the result is of necessity a lack of that
uniformity, which is indispensable to correct
time-keeping. Both the eye and the hand

higher grades, European watches are the
product of the cheapest labor of Switzer
land, and the result is the worthless Ancres,
Lepines and so called Patt nt Levers which
soon cost more in attempted repairs, than
their original price. Common workmen,
bovs and women, buy the rough separate
parts of these watches from various facto
ries, polish and put them together, and take
them to the nearest watch merchant, who
stamps and engraves them with any name
or brand that may be ordered.
How American Watches are Made.
