rrEAI.MVC SCHOOLS OF COOKEBY.
The bureau of Education is sending
out some very interesting pamphlets
dealing with special topics, and among
the latest of them is a "circular of in
formation," giving a mass of statistics
about training schools for cooking.
It is very encouraging to note the
progress that has been made in this re
gard. The importance of good cook
ing has been receiving a -wider recogni
tion than ever before in the history of
the world, during the past five years.
In that time training schools for cook
ing have been established in England,
Scotland, New York, Illinois, Boston,
Tennessee; Kansas, Iowa, North Car
olina, "Washington, D. C, Indiana, and
several other places, and everywhere
the best and most practical results
have been obtained. Perhaps the
most useful of all the instruction given
has been that afforded the poorer class
es. Thus, in several Eastern cities,
Miss Corson has shown the wives and
daughters of mechanics how to market
how to prepare simple, cheap and ap
petizing dishes, and how to vary their
diet without incurring fresh expense.
It is gratifying, too, to find that the
women for whose benefit these lessons
are given fully appreciate their impor
tance. It IS) however the best indi
cation of all that in several States
Bshools-of cooking have been added to
the courses, in the high school and col
leges, while in one or two it has been
resolved to make such instruction a
regular part of common school educa
cation. This is a sign of progressive
ivilization which can hardly be over
estimated. It is only the uncivilized
who affect to despise the proper, prepa
ration of food. Cooking is a question
of morals, of domestic happiness, of in
tellectual growth, in fact, of progress
in every form. To recognize it, there
fore, for what it is, and to give it its
-true place- in the currriclum, is to

and that in this one respect the latter
part of the nineteenth century is be

The tendency of Kearney's sand-lot
speeches is out-la wry and mob violence.
This is wrong. There is a strong gen
eral desire for an early departure of
the Chinese. This desire is not con
fined to the laboring masses. It is
felt by all classed The sand-lot watch
word. "Tho Chinese Must Go," is
echoed by thousands who never trained
and never will train under Kearney's
banner. The anti-Chinese feeling
grows stronger as tho evils of coolie
labor become more and more apparent.
But this feeling ma' be easily eradica
ted. If Kearney should attempt what
he threatens, he will convert thousands
now sympathizing with the "unemploy
ed" "into the friends of the Chinese.
Ono unlawful act a single outrage
will do this. This is a country in
which the rights of all are maintained.
Tho Chinese are here by virtue of a
treaty, and so long as they obey our
Municipal, State and Federal laws,
those laws must protect them and their
property. Nothing would do more to
destroy the feeling now so strong
against the Chinese than an unlawful
attempt to eject them from the city.
Kearney does not seem to realize this,
but it is to be hoped that those whoso
influence is great with the masses un
derstand what would follow an act of
outlawry. The Chinese must go, but
they must be made to go by legal pro
cess, not at the bidding of a lawless
mob. The friends of white labor could
not do the cause they support greater
injury than to counsel a resort to vio
lent measures for discouraging Chinese
immigration

New York State Legislature in regard
to the next Presidency shows the fol
lowing result: Grant, 4G; Grant or
Blaine, 5; Blaine, 5 Blaine or Sherman
1 . Sherman, 3; Conkling, 4; Garfield,
1; Washburne, 1; non-committal, 28.
The men of to-day are too high
strung, says a Chicago paper. Some
of them, the Norristown "Herald"
thinks, are not strung high enough.
