Indifferent peaches will make very nice marmalade an<I even prenei veH; but the object of canning is to have them as nearly like the fresh fruit as possible. Some as nice as 1 ever canned were put up without any sugar at all; then each one could sweeten them or not, as lie chose. All of my household prefer them sweet, though, so 1 generally sweeten •hem when I can them. As 1 peel the the peaches, I drop them in water to keep them from becoming darkened. After 1 have cut all from the stones, I weigh them and put about one pound of sugar to six of the peaches, then cover them with water and let their boil only a few minutes. Take them off as soon as they are thoroughly heated through, can and seal as quickly as possible, if there is not enough syrup to fill the cans, 1 pro portion it among the jars or cans and fill the can witli hot water The syrup may look thin when putting up, but by the time you use them in the winter it is as thick as you could wish. Everyone that tasted my peaches put up in tins way said tliey were the freshest ami nicest they ever ate ; but tliey were delightful peaches that I used. 1 like the tin cans extremely for pea. hes, and you can use the same cans several years by being particular to wash them carefully as so-ui as the fruit is taken out, drying thorough ly.
