Wee Pldding, Quarter of a pound of butter, of a pound of su gar, 2 er;s, rind of a lemon: boat fo 20 minutes; half fill teacups and bake 20 minutes. Cruixees." Three csrgs, 3 table- spoonfuls melted butter, 6 table- spoonsful sugar, a piece of soda, the size of a pea; mix soft with Hour; cut. and fry in hot lard. Tea Cake. Bake 2 eggs in a cup; fill this with thick cream; add 1 cup of sugar, 1 teasponful cream of tar tar, tcaspnonful soda, -.j. enp of flour; flavor to taste. Brown" Bread. One cup of sour milk, 2 cups sweet milk, 3 cups corn meal. 1 cup flour, i cup molasses, 2 teaspoon fills soda; steam 2 hours and bake half an hour. Western Cookies. One cup sour milk, 1 cup powdered sujrar, a little salt, 1 teaspoon ful of soda; mix as soft as possible; roll thin; sprinkle witli sugar; slightly roll out and bake in a quick oven. Potato Cakes. Roast some po tatoes in the oven. When done skin and pound in a mortar, with a small piece of butter warmed in a little milk. Chop a shallot and a little parse" y very finely, add pepper and salt; shape into cakes; egg and bread them, crumb them and fry alight brown. Homijty Muffins. Two cuns boiled hominy beat it smooth, stir in three cups sour milk, half cup melt ed butter, two teaspoons of salt, two tablespoons of sugar; add three cgs well beaten; one teasnoon of soda dissolved in hot. water; two cups of flour. Bake quickly. Tomato Soup. Three pounds of beef one quart canned tomatoes, one gallon water. Let the meat and waf ler boil for two hours, or until the liquid is reduced to a little more than two quarts. Then stir in the tomatoes, and stew all slowlv for three quarters of an hour longer Season to taste, strain and serve. Sweet Pickles. Cook the fruit iu water until a straw will go easily through it and when cool place in a jar with a few cloves stuck in each. To each seven pounds of fruit, take three pounds of'sugar, one quart of vinegar, four ounces of ciunamon and two ounces of cloves. Boil the vinegar and spices together for a few minutes and pour over the fruit. Repeat the boiling for five days in succession and put away for use. Fruit Pies. Even the best of cooks know that it oftentimes is im possible to prevent the juice of the truit from soaking into the under crust, making the pie ;soggy" and unwi.olesome. iirushinc the crust with a white of an egg is said to be efficacious, but Mrs. Ewing tells of a way that, we think, would be excel lent. It is to lay a clean folded cloth or napkin on the uuder crust in the center of the dish, and lay the upper crust lightly over it, wetting the edges to prevent their sticking to gether, then bake. Prepare the fruit berries, peaches or apples by stew ing and seasoning to taste. Take off the top crust while hot, pour in the fruit, replace the crust, sprinkle su gar over it and let it stand to cool together. We think this must be very nice, ind a complete cure for heavy indigestible pie crust. Far mer's Review EDUCATIONAL NOTES. At a recent meeting of the Mary land Teashers' Association the abo lition of corporal punishment in school are generally advocated. More than 250 of the young women at Wellesley College study Chemis try. rTbe College expects to instruct about 500 students next year. The colored children in the public schools are said to be nearly free from myopia, a trouble which is daily increasing among the white pupils. T,v has voted to tax herself for the main- tenanceof six free schools for ten months in the year. The ciiv has 12,000 inhabitants. The sessions of the Baltimore TUW!- ical College an institution that in structs students of both sexes have been extended to seven and a ball instead of live months. The Cincinnati Weslevan College has been purchased by its own au thorities, money having been raised by them and by the Alumna3 Associ ation for the purpose. In the schools of Weimar, Ger many, there is an excellent custom ol taking all the pupils once a week under different teachers on an excur sion of out-door study and observa tion. A Committee of the Massachusetts Society for the University Education of Women are endeavoring to es tablish in Boston a loan binary for the use of students who are in need of such help. The colored children of Georgia are said to be as eager for education as the white children and in many cases more so. In a great many places they are more regular in at tendance than are the whites. No text books in arithmetic or geography are put into the hands of pupils during their first three years in the primary schools of New Haven. The oral method is chiefly used. It is not good policy to let work horses get thin. It costs more to put on flesh than it does to keep it on. lesh that becomes hardened by exercise will be kept up with lss food; under the same woik, than it took to put it on. From 15 to 30 pounds of food will about supply Hie daily consumption of horses, iarrre and small. The English cavalry horses are led 10 quarts of oats and t pounds ot hay three times a day. The American cavalry horses have had the English rations increased to 13 or 14 quarts of oats and an equal amount of hay three limes a day. The hunter, in the season, is allowed from 10 to IS quarts of oats, and about eight pounds of hay, fed five limes a day. The race horse is al lowed from 15 to 20 quarts per day. aud nearly as much hay as the hunt er being usually fed five times a dav. Spruce butter tubs are the best; white hemlock makes a sweet tub; acids from the oak colors the butter and injures its appearance: while ash gives the butter-a strong flavor if kept long and increases the liabihtt to mold; maple smells and cracks badly. Soak all tubs four to six days in brine before using. In the examination of applicants for citizenship before the Court Judge Green asked one of them, who was a Frenchman, "Who makes the laws here?" The reply was- "Ze Shndge." The lawyers smiled. The Court repeated the question, think ing it was not understood. The man again answered: "The Shudse vour Honor, he makes zo laws in these parts."
