As farmers lu this section who haver raisod this grass have found 1U value to exceed their ex pectations.' H should bo tested 1n other localities: : If equally profitable elsewhere, it is certainly an Impor tant acquisition to our stock of grasses. As it will not vegetate until the weather is decidedly warm, it is needless to sow it in early spring;. After the oate, com and potatoes are ulanted. it may be seasonable to at' tend to the Hungarian grass. Any time before harvest, when the ground is in good order, will do, though this latitude we prefer about the 1st of June. ftsTlie seedrtire- small, It pays . well r: to !.have the ground thoroughly pulverized. After sow. Ine. if the ground has' been well harrowed, a roller will cover the seed sufficiently. We sow half a bushel of seed to the acre, but U should be mora rather than less. - The growth of the crop depends much upon the season. We are liable to spells' of dry weather at the time It is growing. ir rain tails in tolerable abundance,, we And the crop ready to cut in sixty days from the time of sowing,, and the yield from one ton to two or more tons per acre, according to the strength of the land. It may be cut and cured the same as we treat a crop of clover and timothy. We might fear when loading it, from its excessive weight, that it is not yet dry enough for the mow. But this ponderosity belongs to it, and perhaps goes to explain its uncom mon nutritious qualities. Either as well cured hay, or as pasture, if we choose, to let our cattle help them' selves from the field, it is highly relished by stock, and whether for fattening or dairy purposes, it bus hardly a superior among the grasses now in use. If seed be wanted it should stand until the seed be ma tured. But even then the plants are not dry or dead, like ripened wheat or timothy. ; The fcrop shows sea of well crowded, beads, .with a profusion nf leaves, still green, rising above them. So that after the seed (fifteen to twenty bushels to the acre) has been threshed' the straw remains a hay of considerable value., I. B. Cecil county, Md. . Upland Crabebbies. Boil some pota- tnp nnd lomo onions, and when cold ont them Into slices together with some beef root. Dress as any other salad. The onions should be out so as to fall apart in rugs. Ryb and Indiak Mcsit.- Use two Quarts rather coarse corn rJteal and one Dart rye meal, stirring in the corn meal first and cooking awhile ii desired, then eover close and cook slowly one hour or more. Scrambled Eqos. Into a frying pan pour a cup of cream; when this is hot, pour in a dozen eggs, provious Iv broken into a dish. Cook slowly, stirring constantly so that the eggs will be- evenly uone, ana serve im mediately. . ,; To Make Beet Sdoab. The roots are washed, rasped and pressed. The juice is boiled, and quicklime is add ed. Snlphurio acid is put in to neu tralize the lime. The syrup is con centrated and clarified and when fur ther reduced by evaporation, sugar will be deposited on the cooling. Yorkshire rAitxiir. Two and one-half pounds of oat-meal, two pound of molasses, one-fourth pound of moist sugar, one-half pound but ter rubbed iuto tbe oat-meal a little ginger or finely cut candied peel may be added it imea; mix au wen to gether, put into tea-cake tins and bake. Fricasseed Thipe. Cleanse the tripe well from fat, cut it into piee.es about two inches broad and four long, put into a stew-pan and cover witn milk and water; let it boil till tender. Slice two Spanish onions and put in a stew-pan with a quartor of a pound of butter: salt, pepper' and nutmeg to flavor, and let thorn brown;- put this sauce with the tripe, add the juice of a lemon and serve very hot, Omelet Souflb. From five eggs remove tbe whites of three and put in l separate dish. Beat the five yolks and two remaining whites together, add half a oup of milk and pour into a frying-pan with butter in it just hot enough not to burn. When this is nearly cooked, spread over the top the three whites beaten to a stiff froth, and act in a hot oven two or three minutes. Fold over, turn on a plat ter, and serve hot. A delicious dish. CoBX PaTTIE. If jou have any cooked corn left over, make it into patties, and see how you will like them. Take two or three tables poon fuls of corn aad put it in a table spoontul of thick sweet cream, a little salt and a teaspoooful of sugar; add floor enough to nuke a soft dough. Take small litem of the dough, roll them in flour, then put ' tbern out thin and fry in hot bird. Mashed Irish potatoes fixed the same way, minus tbe sugar, is a splendid way to cook over cold potatoes. Sweet Potato Poxe. Take twelve or fifteen sweet potatoes (yam; always preferred), boil them until woll done; then peel, masb with a pestle or rolling-pin, and rub through a sieve to get out all the strings or tough fibers; now add sugar to taste, ball dozen eggs, butter to make it very rich, ground cloves, nutmeg and sweet milk, enough to make it the consistency of custard; you uan then pour the mixture in a buttered pan, and bake. Nice, fresh lard can be used instead of butter, but in smaller quantity. How Yankees Cook Beams. A writor of the New York World says this is the way tho down-east lumber men cook them, who eat them twice a day for four or five months each year: Take one quart of beans; first soalt, it pea beans, until they are swelled full, it will take over night oertain; ii yellow eyes, parboil until the skins Oracle open when blown on with the breath; drain off the walor, put about two-thirds of the beans in the pot; put in about one and one half pounds of salt fat pork, then the rest of the beans, bake not loss than twelve hours, first covering the beans with hot water. 1 hese are gtmiine Yankee pork and beans. The way they are cooked in the woods is this: A bole is dug at the foot of the fire, filled around with hot coals and cov ered with hot ashes, whore it remains from 11 o'clock p. m., until breakfast the following morning about 14 or 10 hours. 1 here are probably more beans eaten in Maine than in the whole State of New York. How to Kkki' Meat Fuksii a Long Timk. There is no Bood reason why farmers and their families should eat much salt pork, leaving; all the fresh meat to the inhabitants of cities and villages, when the following meth od will keep meat fresh for weeks, even in the wnrmcst woslher. I know for I havo tried it for more than ten years: As soon as the animal hent la out of tbo meat, alios it up ready for oookinfe. Prepare a large jar by sualdiiiK woll with bot water and salt Mix salt and pulverized saltpetre in the proportion of one tablespoonful ot ssltpotro to one teaouptul of salt uover tbe bottom ot the jar with a sprinkle of salt and pepper. Put down laying ot meat, sprinkle with salt and popper the same us if just Soing to tlie table, ana continue in lis manner until the jar is full. Fold a oloth or towel and wet it in along salt water, in which little of the saltpetre is dissolved, Press the elotli closely over the meat and set Id eool place. Be sure and press the oloth on slightly as each layer is removed, and your moat will keep for months. It is a pood plan to let the meat lie over night after it la sliced, before packing, ihen drain oil all the blood that ooies from it. It will be necessary to ohaniro the oloth oo- oaaionally, or take it off and wash it first In eold water then scald in salt and water as at first. In this way farmers can have fresh meat the year round. I have kept beef that was killed the 12th nf February till the 21st of June.
