OOKING or drying by infra-red rays
is a new art which may revolutionize
food processing. Infra-red radiant heat
“cooks from within” with remarkable speed
and higher retention of food values.
An example is Penny Ann Greaseless
“ Tested” Potato Chips, produced by the
Portland Processing Company. PGE en­
gineers helped to develop the equipment
used in this new industry. But most impor­
tant. the Portland Processing Company
found not only plenty of power for their
requirements in the PGE area, but lower-
cost power here than in any of the other
“ Big Four” Pacific Coast shipping, trading
