OCTOBER 5, 1913- The "Kitchen Immaculate" of the Rainbow Grill, Is Due to the Use of Gas for Cooking the Modern and Cleanly Fuel .Those who visited this new and radiantly beautiful Grill on the opening night were-struck with the unusual manner of decora-' tion, and above allfwith the wonderful effects achieved by unique lighting features 1 !T l,,f ' II 1 1 .m 31 Then,' too, the deft service rendered by the well-trained waiters, in whom many recognized their favorite waiter for years in other eating places, added to the pleas ure of the diners. The distinctly different decoration scheme at tracted . much favorable comment the sweet strains of music charmed -the ear and the eye rested in pleased approval upon graceful ferns and palms while the appetite was satisfied with well-cooked, well served food. The Modern Gas Range and Broiler But those who enjoyed the food the most were the ones that had a glimpse behind the scenes who knew that here at least was a place where absolute cleanliness reigned for the Rain bow's chief pride is in their all-gas kitchen. General View of Kitchen Above is shown a general view of the most modern kitchen in Portland where gas is used exclusively for cooking and where every utensil is of aluminum. No greater care in striving for cleanliness could be used than in seeking the equipment for this kitchen for there's no chance for rust, for dust or soot. . " Expense was not spared service to the patrons was the main thought and gas cookery will shorten many a wait for the diners in this grill. Below are shown the large aluminum boiling jackets, used for cooking large quantities of soups, meats, stews and vegetables. , - , r- - 5 f&f? ' -4ft ' nil The picture to the right, above, is a photo of the immense, three-section gas range which is the very latest type and on which food for hundreds of patrons may be prepared at one time. This picture also shows the broiler and the gas heated steam closets for warming plates and dishes. Below is a photo of the gas bake oven, where the tempting bread; rolls and pastries which will please the guests of the Rainbow are made. This mam moth oven is in charge of a corps of expert pastry cooks. The coffee served in the Rainbow is made in gas-heated urns the dishes are washed and dried automatically the hot water coming trom the automatic water-heating plant on the left which is heated with gas. Automatic Hot Water Heating Plant in Basement The equipment shown and described here was installed by the Rainbow because they sought that which would give the most efficient service. IS choosing the manager for their property the owners of the Morgan building have made a popular selection in the person of William C. North. Mr. North Is one of the best-known residents of Portland, and always has been a factor in the development of the city. For many years he served as Deputy County Assessor. He is thor oughly familiar with real estate condi tions and real estate values In the city. He assumed charge of the Morgan building about November 1. 1912, and has been "on. the Job" ever since. His duties give Titm complete charge of the renting and leasing of the office and storerooms and of the successful operation . of the entire property. Throuzn his efforts many desirable tenants have been procured. His wide acquaintance attracted numerous les sees. Mr. North Is an enthusiastic advo cate of all kinds of public benefits, and was one of the moving spirits in the effort to secure the new Broadway Bridge, which was finished and opened to use last Spring. The celebration at tending the formal dedication was ar ranged by a committee of which he was one of the most active members. EACH FLOOR HAS FOUNTAIN Ball Run Water Will Flow Freely for Patrons of Morgan Building. Among the innovations prominent Id the new Morgan building are the bub bling drinking fountains In the halls of each floor. Pure, cooling, refreshing, sparkling, satisfying Bull Run water will issue forth every minute of the day. uen nants and patrons of the building alike will have access to them at all times. The fountains are located right oppo site the elevators on each floor. ' The bubble bursts over a sanitary mouth piece which rises up from an orna mental nickel-plated stand. This is the first building in Port land, and probably the first on the Pa cific Coast in which bubbling drinking fountains have been Introduced on each floor. ' UNITED CIGAR STORE OPENED R. C. Putnam in Charge of Stand at Park and Washington Streets. The United Cigar Stores Company has opened a new store in the Park and Washington streets corner of the new Morgan building. This makes the fifth store operated by this company in Portland. R. C Putnam Is manager of the new place. He has been connected with the company for five years and was form erly chief clerk In the stand at Fourth and Washington streets. His assistants are Frank Nester and W. F. Marth. A full line of high-grade tobacco prod ucts, which have built up the popu larity of ,the United States, will be kept in stock. With the trend of busi ness westward on Washington street this location should prove valuable, and Manager Putnam feels well pleased with the site in the new building.' Many dentists with offices in the new Morgan building obtained their equipment and supplies from Woodard. Clarke & Co., whose wholesale and W. G. SMITH & CO. THE ralfffi AND V SITING CARD ENGRAVERS have opened the best card-engraving office in the United States, on the Third Floor of the Morgan Building retail drugstore is in the new Wood Lark building at West Park and Alder streets convenient to the Morgan building. ROSARIAN CAFETERIA TO OPEN Dolens Will' Conduct Sanitary Place in Morgan Basement. , In the east basement of the naw Mor gan building will be the Rosarlan cafe teria, conducted by J. E. and E. C Dolen, who have had many years' ex perience in serving the public. No one will have a similar key.
