I am very Kind indeed If I can be
of help to you. either In regaid to
cream puffs or anything else.
A. Try the following mixture: One
half cup butter. 1 cup boiling water.
egrs. 1 cup flour. Heat the water
nd butter together In a pan. When
the mixture bolls, add the sifted- flour,
all at once, and beat vigorously. When
a smooth rather stiff paste is formed,
remove from the fire and beat until
somewhat cooled. Then add the eggs,
unbeaten, one at a time, and beat vig
orously between each egtr. Drop by
spoonfuls on a buttered baking" sheeL
make the cakes circular and high as
possible and place about one and one
half Inches apart. Or put on the mix
ture in long eclair shapes, with the
aid of afrosting tube or paper cone.
Bake about 30 minutes in a medium
oven, with heat strongest at the bot
tom. Open at the side with a sharp
knife to admit the cream filling either
whipped cream or itch custard. Sift
a little powdered sugar over on serving?
If the eggs are very large, three will
be enough.
Failure with these puffs Is usually
due to one of the following mistakes:
1. Cooking the flour paste so long
tiiat it become, greasy and tough and
the butter oozes out. The flour paste
should tend to leave the sides of the
pan. but should not have lost Its elas
ticity. ;. Adding the eggs while the
pasie la still hot enough to cook them,
so that all their elasticity and leaven
ing power Is destroyed before they
reach the oven. 3. Too great hast.

"Always bake them a little longer than
seems necessary.- I. a good rule with
pop-over, and creams puffs. The sides

convenient non-conducting packing ma
terial, such as sawdust, excelsior, wood
ashes, wool, feathers, paper shavings,
powdered cork, or asbestos fiber: some
thin cardboard or stout cloth to line
the nest and make a covering cushion
about inches thick, and. If possible,
a wooden lid.
