D ressing: M ix all o f the dressing ingredients in a small bow l; ch ill.
Salad: Wash peel and chop the cucumber and carrots into cubes. C hop the
cherry tomatoes into halves. Combine the veggies, chopped cilantro and
the nuts in a m ixin g bow l. Add in the dressing and toss w ell. Serve ch ille d !
You really can add any additions to this that you desire. I sometimes throw
in some dried cranberries and some fresh blueberries!

1. Combine crumbs, I/4 c u p sugar and melted butter. Press firm ly into
bottom o f 13 x 9 inch pan. C h ill. Beat cream cheese w ith 1/4 cup sugar
and 2 tablespoons m ilk u ntil smooth. Fold in h a lf o f the C ool W hip.
2. Spread over crust. Arrange blueberries in an even layer. Using 3
1/2 cups cold m ilk, prepare pudding as directed on package. Pour over
berries.
