• 1/3 cup fat-free milk
• Cooking spray

• 1/2 cup finely chopped onion
• 2 cups finely chopped peeled
red tomato
• 1/4 tsp. salt

Locally grown.
1. Preheat oven to 400°.
2. To prepare the green tomatoes, combine tlour and next 4 ingredients
( Hour through sugar) in a shallow dish. Dip tomato slices in milk: dredge
in Hour mixture. Lightly coat both sides of tomato slices with cooking
spray.
3. Place a baking sheet in oven: heat at 400° for5 minutes. Remove from
oven; immediately coat with cooking spray. Place tomato slices on
preheated baking sheet. Bake at 4(X)° for 25 minutes, turning after 15
minutes.
4. To prepare the gravy, melt butter in a medium nonstick saucepan over
medium heat. Add mushrooms and onion, and cook 4 minutes or until
tender, stirring frequently. Add chopped red tomato; bring to a boil, and
cook for 10 minutes or until liquid almost evaporates. Stir in 1/4 teaspoon
salt and 1/4 teaspoon pepper. Spoon the gravy over the tomato slices.
Yield: 4 servings and 1/3 cup gravy

1. Place the peeled and sliced tomatoes in a colander over a large bowl
or the sink, sprinkle with salt and pepper. Allow to sit w hile preparing the
other ingredients.
2. Preheat the oven to 425F. In a bowl combine the cheese, bacon, and
3-Tbs. mayo. Mix thoroughly. Carefully lay the bottom pie curst in a 9”-
incli pie plate. Arrange a layer o f tomatoes, sprinkle with half the sliced
onion, half the garlic, and l/2-tsp. dried basil. Repeat the first layer with
the remaining tomatoes, onions, garlic and basil. Top with cheese
mixture.
3. Add second crust, seal the edges, and cut slits in the top.
4. Bake for 45 minutes, checking after 30 minutes (cover with foil if the
crust browns early).
5. Let cool 10-15 minutes to allow cheese to set.
Note: A quick hot water bath will make the tomatoes easier to peel.

Let stand 10 minutes. Place in a colander, rinse with cold water and drain.
2. Preheat oven to 350 degrees F ( 175 degrees C ). Grease and Hour a 9x 13-
inch baking pan.

3. Cream together; butter and sugar until smooth. Add eggs and beat
until creamy.
4. Sift together Hour, cinnamon, nutmeg, soda and l/4teaspoon salt. Add
raisins and nuts to dry mixture; add dry ingredients to creamed mixture.
5. Dough will be very stiff. Mix well.
6. Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch
pan.
7. Bake for 40 to 45 minutes in the preheated oven, or until toothpick
inserted into cake comes out clean.
