Chocolate Pound Cake Makes Baking Easy
F o reith er baking novices or sea­
soned pros, a dum p cake is a no-
brainer. T o prepare one, you sim ply
d um p the ingredients into a bowl
and beat them , then pour the batter
into a pan and bake it. A lthough a
d um p cake is easy to m ake, it’s ju st
as good as a m ore fancy cake. P er­
haps th a t’s why dum p cakes, in­
cluding pound cakes, have been
p opular for hundreds o f years.
T he secret to the cake is in prop­
erly beating the ingredients, so fol­
low these tips.
Let the butter soften and take the
eggs out o f the fridge to w arm a bit.
For an airy batter, beat the softened
butter and sugar really well until the
cream ed m ixture looks pale and
w ispy. Beat in the eggs and vanilla
until all the streaks are gone. Any
curdling you m ight see will disap­
pear as you b ea t. T urn o ff the mi xer
occasionally and scrape the batter
at the sides o f the bow l into the path
o f the beaters so everything gets
thoroughly mixed.
Sw itch to low speed w hen you
add the dry ingredients to keep the
flour mixture from flying into the air.
Since overbeating the flour can
toughen a cake, beat only until the
batter has no streaks. Stir in the
chips by hand so the m ixer does not
break them.
Be sure the cake is done before
you take it out o f the oven. Y ou can
use either a cake tester, a thin metal
wire with a knob on top, or a wooden
pick. G ently push the tester into the
m iddle o f the cake and pull it out. If
you see liquid batter on the tester,
keep baking. If the tester com es out
clean, rem ove the cake from the
oven and let it cool. A silky-tex­
tured pound cake is rich and moist
all by itself, so you d o n ’t need to
frost it. Just slice and enjoy!
W ith butter, lightly grease bot­
tom and sides o f 8 1 /2 x 4 1 /2 x 2 1 /
2 o r9 x 5 x 3-inch loaf pan. Dust with
flour. Shake out excess flour. Set
aside. W ith a sifteror mesh strainer.
Makes 1 loaf cake or 8 servings
• Butter
• Hour
• 1 1 / 4 cups all-purpose flour
• 1 / 4 cup unsweetened baking
cocoa
• 1 /2 teaspoon salt
• 1 cup butter, softened (2 sticks)
• 1 cup sugar
• 4 eggs
• 2 teaspoons vanilla
• 1 /2 cup mini chocolate chips
sift 1 1/4 cups flour together with
the cocoa and salt into bow l or onto
sheet o f w axed paper. Set aside.
In large m ixer bow l at m edium
speed, beat to g eth er butter and
sugar until light and fluffy, about 3
to 5 m inutes. Beat in eggs and va­
nilla until thoroughly blended, at
least several m inutes. At low speed,
gradually beat in reserved flour
m ixture, 1/2 cup at a tim e, beating
ju st until blended and no streaks
rem ain. Stir in chips. Spread batter
evenly in prepared pan.
Bake in preheated 325 F oven
until cake begins to pull aw ay from
sides o f pan and cake tester in­
serted near center com es out clean,
about 60 to 70 m inutes for 9-inch
pan or 75 to 85 m inutes for 8 1/2-
inch pan. (If tester show s dark
brow n, y o u ’ve hit a m elted choco­
late chip. Test again in another spot.
T o prevent overbaking, rem ove
cake from oven as soon as no light
brow n batter show s on tester.) Cool
on w ire rack 10 m inutes. W ith nar­
row spatula or knife, loosen cake
from pan. G ently shake onto wire
rack. Cool com pletely. T o retain
m oisture, store cooled cake in plas­
tic wrap. Serve plain or topped with
fruit, ice cream or whipped cream , if
desired.

ucts.

service announcem ents prom oting
balanced breakfast, including an
anim ated“It’sB reakfast Ti m e” spot
featuring singing spoons and forks.

m ing that encourages kids to ex er­
cise.

SpongeBob will be giving a thumbs-
up on b a g s o f s p in a c h fro m

acters will appear on bags of

not the first cartoon charac­
ters to go wholesome. Clifford
the Big Red Dog lent his name
to an organic cereal, Clifford
Crunch. And A rthurthe aard-
vark appears on som e prod­
ucts m ade by A nnie’s H om e­
grow n, including cans o f organic
A rthur Loops.
But established cartoon charac­
ters have yet to m igrate noticeably
beyond the cereal and candy aisles
to the produce and organic sec­
tions.
T orres said the netw ork w ants to
strike sim ilar licensing agreem ents
even as they work with m ainline
fo o d m a k e rs to m a k e su re
S pongeB ob products are reform u­
lated to m ake them healthier.
O f course, som e child health
advocates grum ble that the best
w ay to raise healthy kids is to cut
the sw eets and turn o ff the TV.

that w hile TV and ice cream arc part
o f kids’ lives, the netw ork is using
it’s influence to nudge kids tow ard
