JÉ!t * •* ’A* y. •" • - * ■ .**•* «♦* Baked Halibut With M artinelli’s Cider And Orange Liqueur Glaze 2 % cup M artinelli’s Cider or Apple Juice 16 cup Grand Mamier 2 tablespoons cornstarch % cup freshly squeezed orange juice 2 tablespoons fresh lemonjuice 1 16 pounds fresh halibut filets salt and pepper to taste Combine 2 cups Cider and Grand Mamier in saucepan. Boil until re­ duced by half, about 15-20 min­ utes. Blend cornstarch with remain­ ing 16 cup o f Cider; stir into hot mixture until thickened. Stir in or­ ange and lemon juices. Place hali­ but in baking dish, add water to cover bottom, bake covered at 400 degrees Fahrenheit for about 20 minutes until just done. Serve with sauce ladled over. T h a t’s the co n clu sio n o f a survey that in ­ clu d e d 774 A sian and P acific Is­ lan d er six th , eig h th and tenth grade stu d en ts (as part o f a su r­ vey o f 10,000 stu d en ts o v erall) w ith in M ultnom ah C ounty. The survey m easured the p resen ce o f 40 assets or b u ild in g blo ck s - th at all young p eo p le need to grow up healthy, caring and com ­ p e te n t. O n av erag e, as o u r su rv ey re ­ v ealed , local A sian and Pacific Islan d er youth have only 18 o f these 40 assets, leaving them v u l­ n erab le to m any p roblem s. A s th is re se a rc h re p o rt r e ­ v eals, you can do a great deal. F or exam ple, m ost A sian and P a­ cific Islan d er youth are o p tim is­ tic ab o u t the future, but only a third know how to plan ahead and m ake choices. T his is som ething com m u n ity m em bers can m odel M •h r i‘ * Ä» and teach. W hile tw o -th ird s are m o tiv ated to do w ell in school, o n ly one in five say th e ir parents are a c tiv e ly in v o lv e d in th e ir sch o o ls. O ur A sian and Pacific Islan d er young peo p le place a high value on helping others, p ro ­ m oting eq u a lity , and reducing h u n g er an d po v erty , but only one in fo u r say that youth are given u sefu l ro les in our com m unity. W e can find those ro les fo r our young peo p le. O ur ch ild re n have stro n g m o tiv atio n to do w ell, but m any are m issing assets like se lf­ esteem th at they need to ensure su c c e ss. The in n er stren g th s and a tti­ tudes o f A sian and P acific Is­ lan d er youth c o n tra d ic t the m yth that young peo p le sim ply d o n ’t c a re . M o st h av e frie n d s w ho m odel resp o n sib le b e h a v io r and m any are in volved in com m unity serv ice and th e ir re lig io u s co m ­ m u n ities. T hey are m o tiv ated to do w ell in school, care about o th ­ ers, stan d up for w hat they b e ­ lieve in, and those inner strengths allow them to see a b rig h t future for them selves. A sian an d P a c ific Is la n d e r youths c o n tin u e to b eliev e and to care and to hope even as they lack su p p o rt th at can virtu ally guarantee success. W hile m any A sian and Pacific Islander youth have m any inner stre n g th s, th ey su ffe r b ecause they d o n ’t have enough adult in­ volvem ent in th e ir lives. The vast m a jo rity o f th e se y o u th s say adults d o n ’t value young people. M ost say they d o n ’t have a p o si­ tive adult role m odel. M any say they d o n ’t have caring neighbors. T hese are th in g s ad ults can help to fix. T hrough this su rv ey , we d is­ covered that m any A sian and Pa­ cific Islan d er young people feel they have fam ily su p p o rt and love, but a su rp risin g num ber say they do not. T he m a jo rity say their fam ily d o e sn ’t com m unicate w ell. M any youth need adults who can help them to b u ild se lf­ esteem and learn d e c isio n -m a k ­ ing skills. On the average, our A sian and P acific Islan d er youth have ju st 18 o f the 40 asse ts they need, b u t it d o e sn ’t have to stay that w ay. T his im p o rtan t research show s that for our A sian and P acific Islan d er young people to succeed, we m ust take the tim e to show them w e care for them , take the tim e to com m unicate w ith them , and take the tim e to su p p o rt them .
