Pastry for I-crust 9-inch pie
2 'A quarts fresh spinach, torn,
cooked, well drained
'/«lb. pasteurized process cheese
spread, cubed
4 eggs, beaten
4 crisply cooked bacon slices,
crumbled
•A cup cottage cheese
% cup chopped onion
% teaspoon pepper

On lightly floured surface, roll
pastry to 12-inch circle. Place in a 9-
inch pie plate. Turn under edge;
flute. Prick bottom and sides with
fo rk . Bake at 350*. IO minutes.
Combine remaining ingredients;
mix well. Pour into shell; continue
baking 33 minutes or until set Top
with additional process cheese
spread, sliced. Let stand I0 minutes
before serving.

munity Health Council has hit upon
a novel way of increasing the
availability o f children’s car seats
for lower-income families.
Using the M ultnom ah County
f a ir — and it’s theme of " A Family
A -F a ir” — as the focal point o f its
promotion, the Community Health
Council has arranged for free ad
mission to the Fair for anyone
bringing a car seat and donating it
to the County’s loan program
For more than three years, the
County has been conducting this
child car-seat restraint loan
program, lending the seats to low-
income families with small children.
N oting the success o f this and
similar programs in reducing the in
cidence o f death and injury to
youngsters, the Legislature passed
the C hild Restraint Law , making
child-seat restraint use mandatory
for passengers under five years of
age-
That recently enacted law placed
additional demands on the County’s
program and created long waiting
lists for seats until the Community
Health Council came to the rescue.
The Council’s promotion of both
the Fair and the loan program is
aimed at fam ilies whose children
have outgrown the need for the
restraints. Persons bringing their
used seals to the Fair gates will be
admitted free and can leave the seats
at a special booth inside the main
building The booth will be staffed
from noon through 8 p.m. each day
of the Fair, which runs from July 24
29 at the Expo Center in N orth
Portland at Marine Drive.
The car seats will be cleaned and
repaired before being turned over to
the loan program Donations of
cither car seals or cash to the
program arc tax deductible.
