Make a Hawaiian feast

whatever state you call hom e, you

your own backyard with a tropical
p arty menu fea tu rin g easy, make-
ahead recipes.
These economical dishes w ill put
a spark into any patio picnic. And
because you prepare everything in
advance, you can enjoy the exotic
taste of the islands in minutes.
M aybe you can't travel to Hawaii
this summer to join in the statehood
c e le b ra tio n . But w ith these easy,
m ake-ahead recipes, y o u 'll enjoy
the taste o f (he tropics.
Get things o ff to a cool start with
ch illed H a w a iia n C h icke n Salad.
H A W A U A N C H IC K E N S A L A D
2 Cups cooked rice (do not add
b u tte r/m a rg a rin e when cooking
rice)
2 cups chopped cooked white chicken
I cup fresh pineapple chunks
I cup strawberry halves
I cup celery slices
1 tablespoon lemon juice
'/« teaspoon ground ginger
!6 teaspoon pepper
16 cup plain yogurt
'/< cup almond slices
A llo w cooked rice to cool. In a
large m ixin g b ow l co m b ine rice,
chicken, pin eapp le, straw berries,
celery, seasonings and lemon juice;
m ix lig h tly . S to re m ix tu re in a ir ­
tig h t sealed bow l in re frig e ra to r.
P rio r to serving, add yo g u rt and
alm onds to m ix tu re ; m ix lig h tly .
G arn ish w ith a d d itio n a l s tra w ­
berries and p in ea p p le. M akes
4-6 servings. Serve ind ividu al p o r­
tions on lettuce leaves or in pineap­
ple shells.
T R O P IC A L C R E A M C H E E S E
SPREAD
I 8-02. package soft cream cheese
2 tablespoons apricot preserves
V» cup crushed pineapple
2 teaspoons honey
16 cup flaked coconut
Combine cream cheese, preserves,
crushed p in ea p p le and honey,
mixing until blended. Add coconut
and m ix w ell. C h ill. Serve w ith
Banana Nut Bread slices. Makes I VS
cups.

Combine tea with fruit juice m ix­
ture; stir u n til well m ixed. C h ill at
least 2 hours in refrigerator before
serving.
Serve in tum blers over ice; g a r­
nish with lime slices Makes eight 8
ox. servings. V a r ia tio n : p rep are
beverage using orange spice tea

2 cups milk
4 eggs
A cup sugar
16 cup all-purpose flour
V* cup butter or margarine, cut-up
I teaspoon vanilla
H teaspoon salt
I cup flaked coconut
ground nutmeg
16 cup toasted coconut
'/« cup toasted sliced almonds
BANANA N U T BREAD
1 cup sugar
16 cup shortening
2 eggs
I teaspoon vanilla
1 cup ripe bananas, mashed
2 cups flour
S6 teaspoon baking soda
16 teaspoon baking powder
'/• teaspwin nutmeg
V» teaspoon cinnamon
I cup chopped macadamia nuts
In a large m ixin g bow l cream
sugar and shortening, add eggs and
v a n illa , beat u n til f lu f f y . A dd
bananas In m edium m ixing bowl
combine flour, baking soda, baking
powder, nutmeg and cinnamon; add
to banana m ix tu re . S tir in nuts.
Pour into greased 9 " x 5 " loaf pan
(fo r smaller loaves, use tw o pans).
Bake at 350 degrees fo r 45 to 50
minutes or until done. C ool in pan
10 minutes then turn onto rack and
cool thoroughly.

Cheese Spread.
T A N G Y L IM E TEA
I 6-oz. can o f froxen lim eade con­
centrate
'A cup unsweetened pineapple juice
4 teabags
4 cups boiling water
'/» teaspoon ground ginger
In a 2 -q t. p itc h e r, mix lim eade
concentrate w ith 4 cans o f w ater;
add p in eapp le juice and stir to
blend. Place teabags in 4 cups o f
boiling water; steep for 5 minutes.
Remove teabags; add ginger while
stirring tea.

m ilk, eggs, sugar, flour cut-up but­
ter or m argarine, vanilla and salt.
Cover; blend about 10 seconds until
well mixed (do not overblend). Stir
in flaked coconut Pour egg mixture
into greased 9 " pie plate. Sprinkle a
little nutm eg ato p fillin g Bake at
350 degrees fo r 40 m inutes or till
knife inserted near center comes out
clean (A s pie bakes, it fo rm s its
own soft cru s t.) C o o l. C o ver and
chill to store. When serving, garnish
w ith toasted alm onds and toasted
coconut. Makes 8 servings.
T IP : A fte r y o u 'v e baked a
custard pie fo r the recom m ended
time, gently shake the pie to test for
doneness. I f the area that still ap ­
pears to be liquid is smaller than the
sire of a quarter, the pie is done.

TOASTED C O C O N U T
Spread 'A cup coconut evenly in
shallow baking dish. Place in 325
degree oven fo r 10-15 m in utes,
stirring frequently.

Spread '/« cup sliced alm onds in
shallow baking dish. Place in 300-
degree oven fo r 5 minutes or u ntil
golden.
