Sauce uses salmon steaks and
tomato sauce. Fresh zucchini pro­
vides a colorful counterpoint and
adds moisture during cooking.

1 hard-cooked egg, chopped
2 teaspoons dried dill weed, crushed
Yi teaspoon black pepper
2 eggs, slightly beaten
3 cleaned trout (about I pound <wA)
M to 1 cup finely crushed corn
bread stuffing mix
Vt cup salad oil
Lemon wedges for garnish
T o make sauce: In small bowl
combine thoroughly sour cream,
hard-cooked egg, dill weed and
black pepper. Chill.
Beat eggs in a low bowl or pie
plate.
Place stuffing mix on waxed
paper. Dip trout in egg mixture and
then in stuffing mix.
In I 12-inch or 2 10-inch skillets
over high heat, in hot oil, cook fish
until golden brown or until fish
flakes easily when tested with a
fork. Serve fish with sauce. Garnish
with lemon wedges. Makes 6
servings.

shining overhead all mean vacation
to more and more Americans. And
vacation means new adventures,
new foods and lots o f fun.
Why not bring a little o f that vaca­
tion spirit and fun right into the
backyard. Even if camping out isn’t
high on your list o f favorite activi­
ties, there’s almost nothing better
than biting into a crisply fried trout.
The only thing that beau it might be
a sumptuous salmon barbecue that
cooks in its own foil wrapper right
on the grill.
Whether you are baking fish in an
oven at home, on a backyard grill or
over an open fire at your favorite
campsite, keep a close eye on it; fish
should never be overcooked. Just as
soon as the Uansluscent color o f the
flesh has turned opaque all the way
to the backbone, it is ready. Quickly
sauce it, serve it and enjoyl
D on’ t worry about bones. Except
for shad, cooked fish will generally
separate easily from the central
bone by simply lifting the flesh away
from the bone with a knife or spatu­
la. Small fish can be served whole.
L ift o ff the top fillet, remove the
backbone and then lift out the
bottom fillet. Fish steaks cut with a
round, central bone will contain
several smaller bones radiating into
the flesh. Oently pull the flesh away

from the central bone and they
should slide right out.
Here are two delicious ways to en­
joy fish this summer. Both recipes
are perfect for campfire cooking or
a grill as well as indoors. Southern
Style Sauteed Trout starts with a
sauce base o f sour cream. Add hard
cooked egg and fragrant dill weed.
Chill and serve with trout, perch,
catfish or even fillets o f sole that
have been first dipped in beaten egg
and then dipped in crushed corn-
bread stuffing mix. Once the fish is
fried in a little hot fat, the result is
fragrant, crunchy and delicious.

this wonderfully different way to
barbecue your favorite will be just

4 salmon steaks (6 ounces each)
1 can (8 ounces) tomato sauce
2 teaspoons drained capers, optional
M teaspoon garlic powder
V» teaspoon chili powder
I medium zucchini (about Vi pound),
thinly sliced
Vk cup grated Parmesan cheese
Cut 4 large squares (14 inches
each) o f heavy duty or double thick­
ness regular foil. Place 1 salmon
steak in center of each piece o f foil.
In
medium
bowl,
combine
thoroughly tomato sauce, capers,
garlic
powder,
chili
powder,
zucchini and cheese; spoon evenly
over salmon.
Bring corners o f foil together;
twist to seal and make tight packet.
Place foil packets sealed-side up on
grill 4 inches above glowing coals.
Cook 23 minutes or until fish flakes
easily when tested with a fork.
Makes 4 servings.
Oven Method: Place in oven
scaled-side up. Bake at 400°F. for
20 minutes or until fish flakes easily
when tested with a fork.
