Pumpkin Softies—Sandwich cookies for fall
A u tu m n is the cookie season.
Homecoming festivities, Halloween,
open houses, bake sales and a fte r­
school snacks all call fo r cookies.
And you’ re ready for all the occa­
sions with this oatmeal cookie recipe
for Pumpkin Softies.
Canned pumpkin, a plentiful pro­
duct during fall, provides flavor and
moistness to these cookies, which
are seasoned, a p p ro p ria tely , w ith
p u m p kin pie spice. Q uick o r old-
fashioned oats provide pleasing nut­
like flavor and texture.
You can choose to eat Pum pkin
Softies plain or to p air them as
sandwich cookies. T o make sand­
wich cookies, just spread the filling
(a luscious blend o f cream cheese,
butter, vanilla and confectioners su­
gar) on the bottom o f half the cook­
ies and top with the remaining half.
Store them in a tightly covered con­
tainer in the refrigerator.
Pumpkin Softies will satisfy both
children and adults all during a u ­
tum n. They are spicy, pum pkin-y
and mighty good I

cup o atm e al, quick or old
fashioned, uncooked
I 'A teaspoons pumpkin pie spice
I teaspoon baking powder
I teaspoon salt
14 teaspoon soda
I cup Firmly packed brown sugar
14 cup granulated sugar
‘A cup butter or margarine,
softened
I egg
I cup canned pumpkin
Filling:
I 3-oz. pkg. cream cheese
3 tablespoons butter or margarine,
softened
14 teaspoon vanilla
'A cup confectioners sugar
For cookies: Heat oven to 375 °F.
Grease cookie sheet, in small bowl,
com bine flo u r, oats, pum p kin pie
spice, baking powder, salt and soda;
set aside. In large bowl, beat togeth­
er sugars, butter and egg. Alternate­
ly blend in pumpkin and flour m ix­
ture. Drop by heaping teaspoonfuls
onto prepared cookie sheet. Bake
about 15 minutes or until edges are
golden brown. C ool; remove from
cookie sheet.
For filling: in small bowl, beat to­
gether cream cheese, butter and van­
illa. Gradually add sugar, beating at
high speed on electric m ixer un til
smooth. Spread filling evenly over
bottoms o f o n e-h alf o f the cooled
cookies. T o p with remaining cook­
ies. Store cookies in tightly covered
container in refrigerator.
Makes about 114 dozen sandwich
cookies.

Making these Pumpkin Softies into sandwich cookies is easy.
Spread filling on bottoms of half the cooled cookies and top with re-
mainina cookies.

regular pruning schedule prevents
them fro m becom ing overgrow n
and formless. Pruning also keeps
plants healthy by removing excess
wood, which has the added advan­
tage o f improving air circulation to
the plant.

types o f landscape trees and rose
bushes.

eased, injured, or weak growth, and
then remove shoots or twigs that are
growing in the wrong direction or
crow ding and crossing other
limbs.”
Before pruning the tree, have a
good idea o f the form you want the
tree to take and then prune accord­
ingly, advises McNeilan.
A fte r rose bushes are done
bloom ing in the late sum m er, old
canes and crossing grow th in the
p lant can be pruned o u t. A good
guideline to use in pruning roses is
to cut stems back to where they are
about the thickness o f a pencil. This
will stimulate new rose bush growth
in the fall. Also cut out any diseased
growth.

many ornam ental trees, such as a l­
der and birch, and large shrubs with
soft foliage, such as lilacs, become
campsites for web-tent building fall

may also be attacked by this pest.

smaller branches on large trees.
M ature webworms are about one
inch long and are pale yellow to
brown in color w ith yellow stripes
along each side, and a dusky stripe
along the back.
F or best w ebw orm c o n tro l, re­
move and burn th e ir w ebbing as
soon as it is noticed.
Diazinon, Orthene or Dipel insec­
ticide sprays are recommended for
webworm control on ornamentals.
Be sure to follow all label directions
on any chemical sprays used.
“ Spray as soon as the tents ap­
p e a r,” M c N e ila n advises. Large
tents may be d iffic u lt to penetrate
unless a sprayer that develops a
strong spraying force is used.
Repeat applications may be neces­
sary.
