Jim M cClarin recently told us how he found
out th a t his compost heap could skrw-cook
food . . w ithout electricity One evening, when
his refrigerator went on th e blink. Jim decided
to m ake yogurt rath er th an let some fresh milk
go sour He had heated the m ilk, cooled it
down, and added a helping of already-m ade yo
g u rt to get the recipe started when he was un
expectedly invited out to dinner Jim says th a t
a t thia point he remembered reading th a t the
ancient Chinese sometimes cooked eggs in
compost So. he placed the cooking container
filled w ith yogurt-to-be in his backyard heap,
hoping it'd keep warm enough to work W hen
he lifted the lid the next day. though. Jim found not yogurt but a crude cheese!
H e guessed th a t his humus pile had been too hot for the job. so a fte r th a t first ex
perim ent Jim decided to be more picky M cC lann reports since m y in itia l attem pt.
I'v e learned to probe carefully in the w orking mound un til I find a spot w ith ju st the
righ t w arm th to create succeaaful compost-cooked yogurt . . . 1 dish th a t has become
a regular p a rt o f m y d iet "
Jim 's next cooking effo rt involved a nice fresh egg safely enclosed in a plastic bag
H e found a " ju s t rig h t" hot spot in the compost, dropped in th e sack w ith a rope a t
tached. and covered it over again
Then early the next day I peeled and ate the most m outhw atering hard-boiled egg
of m y life
except, o f course, th e taste tre a t hadn t been boiled Now. whenever I
hanker for a real breakfast tre a t. I drop a few eggs into the compost heap in the eve
ning and look forw ard to a m orning feast. "
Before long. Jim got around to try in g to cook meat dishes in his organic oven
The first roast, alas, was a failure His newly built compost pile hadn t warmed up
enough yet. and th e established heap was a bit too cool U ndaunted. Jim bought an
other r o a s t.
along w ith a m eat therm om eter Once the new heap had gotten up to
heat", a second piece o f beef was placed inside the yogurt pail Ito keep it sealed
against bacterial and buried in the hottest pa rt of the pile (where Jim tested out the
tem perature a t 155 °F).
"Thirteen hours la te r." th e experim enter says, "a brief taste of the m eat trapped in
its own broth convinced me th a t compost it the only way to roast! I served the lender,
juicy viand to friends a t lunch th a t day. and they all agreed it was superb
" In no tim e at all. a duck w ith orange juice and apricots found its way into the hot
heap I t stayed buried in its sealed container for 23 hours a t 1 5 5 -1 6 5 ’ F
and was
perfect when I served it w ith wine and wild plum sauce
Jim has found th a t there ore some lim itation s to this unusual cooking method, how
ever Soybeans and pinto beans never really softened, and he had no better luck with
potatoes and carrots
