M ozarella and h a lf o f the Ricotta
over shells. Add the remaining m ix

s tic k in g to one a n o th e r. Rinse
cooked shells in cold water, drain
well; set aside. Heat remaining olive
oil in large dutch oven. Cut sausages
in bite size pieces, add to o il and
g a rlic and cook 10 m in u te s.
( arcfully pour o ff excess fat except 4
tablespoons. Stir in chopped onions
and eggplants; cook u n til tender.
Add salt, paprika and oregano. Stir
w e ll, cook over m edium heat 15
minutes. Stir shells into sauce. Spoon
tu re and spread evenly over the
cheese. T o p w ith a layer o f the
remaining cheese. Bake in 350 degree
preheated oven fo r 30 m inutes.
Sprinkle with chopped parsley and
grated Parmesan cheese. Serves S to

thoroughly heated.
