Mrs.
Session is a nutrition advi­
sor for the
Multnomah
County Nutritions Edura
tion Program.
She has a way of turning
everyday foods into gour­
met dishes with recipes she
has collected
throughout
the years, adding her own
inimitable
touch.
The
workship will be on Wed
nesdaya from 10:00 a m to
noon,
Keverend
Edsel
Goldson. assistant pastor of
Mallory Avenue Christian
Church, will assist Mrs.
Session in presenting some
Jamaican dishes and re
cipes.
One of the recipes that
Mrs Session will demon
strate at the workshop will
lie a hearty Cuban Black
Bean Soup.
She suggests
that it would make a
company supper served
over hot steamed rice and
topped with
hard rooked
egg and chopped scallions.
A tossed green salad would
make the meal even more
nutritious, she advises.
Mrs. Session has been
working with the county
extension service for the
past five years and holds a
c e rtific a te from Oregon
State University
She has
also studied nutrition at
Portland State University
and has taken special
courses in gerontology. For
three years she has been
working in the Walnut Park

enrolls
families and
groups on
limited budgets and works
with them in their homes
giving them rooking se

She shows them
shopping techniques on how

1 clove garlic
dashes of salt, black pepper,
red pepper, mace
3 whole cloves
Vi cup sherry
2 hard rooked eggs, sliced
slices of lemon and sprigs of
parsley
Wash beans; soak over
night; drain
Add water,
finely chopped pork
or
baron, onions, garlic, and
seasonings. Cover and cook
slowly 3 hours until beans
are very soft. Bun through
sieve.
Place in saucepan;
heat. Add sherry. Serve
garnished with slices of
egg. lemon and a sprig of
parsley

2 cups black beans
10 cups water

When you are preparing
a main dish, it often takes
little more time or effort to
make enough for several
meals. You ran freeze it all
in meal size packages, or
serve part of it the same
day and freeze the rest.
For tiptop quality and
economical use of freezer
spare, plan to use pre
rooked main dishes within
two or three months. You
ran, however, keep these
foods, if properly packaged
and stored, up to six
months w ith o u t serious
quality loss After that, the
food won't be as tasty but it
will still be safe to eat.
Prepare the food just as
you would if you were
going to serve it right
away. Do not overcook. In
fart, some ingredients in
main dishes that must be
reheated for serving are
better if slightly underdone
when frozen. Pastry crusts
are better if frozen un
baked. They will be more
tender, flakier, and have a
fresher flavor than those
2 medium sized cucumbers
1 teaspoon salt
I large clove of garlic,
crushed
1 tablespoon lime or lemon
juice
I or 2 teaspoons fresh hot
pepper, seeded and finely
chopped
I ’eel cucumber and cut
into halves lengthw ise.
Scrape out seeds; chop the
cucumber coarsely and mix
with salt. Allow to stand
for 10 minutes.
Drain
thoroughly.
Toss with
garlic, lime juice and hot
pepper. Serves 4.
