TIIE 3I0RXIXG OREGOXIAN, THURSDAY, OCTOBER 20, 1921 13 Wiii Search for Mrs. Grace Mc Clure Proves Fruitless. . SAM LEE, CHINESE, IN JAIL Eclief Is That Young Woman Who Disappeared Recently Is Kept in Hiding by Oriental. Their efforts to locate their 20-year-old daughter who several months ago became a victim of the drug habit having failed, an aged mother and father have appealed to the federal authorities, and Sam Lee, Chinese, is in the county Jail in default of $3000 bail, while an Investigation is being conducted to determine whether he Is responsible lor the disappearance of the cirl. Mrs. Grace McClure is the name of the missing young woman and her parents are Mr. and Mrs. w. js. Lant, 1613 Stockton street. Following a complaint made to the federal authorities by the parents, Lee was arrested Tuesday afternoon In Salem as he alighted from a train. The parents charged the Chinese with having' made a drug victim of their daughter. Woman Arretted In Raid. According to the story the parents told Assistant United States Attor ney Fiogel, their daughter went to work for Lee in the Oak hotel. The place was raided September 8 and Mrs. McClure was arrested. An attor ney, hired by the Chinese, obtained liberty for the young: woman and she went to the home of her parents, where she stayed a few days. Lee telephoned the Lang home and In talking with Mrs. Lang toid her ho was extremely sorry that her daugh ter was arrested in the raid because she was the clerk at the hotel. He was invited to the home for dinner, according to the mother, and brought with him a bundle of laundry for Mrs. McClure. Shortly after he left the home the daughter began acting strangely and the parents became aware that she was using drugs, presumably given her by Lee in the laundry package. "Several days later my wife took her downtown to one of the theaters and left her there, expecting to meet here on her return from shopping," said Mr. Lang. "When my wife re turned Grace was gone and we have not seen her since. Three days after her disappearance she called over the telepnone and said she was coming home. Prisoner, Parents Think. "While she was talking my wife heard a noise like someone thrusting a hand in front of her mouth to pre vent' her talking. The conversation ended and that was the last we heard from her." The parents reported to the police that the girl had disappeared but no tracts were found that might lead to her recovery. Mr. McClure is a brick mason. The parents asserted that they had provided the girl with all she could expect, but that the Chinese had obtained such a hold on her that It was impossible for them to please her. Federal authorities believe that Sam Lee has the girl In hiding. He Is being held on a narcotic charge until a thorough Investigation can be made. Lee understands English perfectly un til he is asked regarding the where abouts of the woman, and then he suddenly shows a lack of understanding. Tones of Brass Choir Are Difficult to Play. Fach Is Produced by Different Pressure of Lips. BY CAVERLY BEAUMONT. Article No. 4. T IKE tho wood winds, the tones X-i of the brass choir are produced by the breath of the player, but In the case of the brasses each tone is made by a different pressure of the ilps, and it Is for this reason that iney are so difficult to p!av. Los Anneles Is famous for the brass choir of its orchestra, heard here last spring, and demonstrating what beau tifully rich and organlike quality this section can furnish. The trumpet Is the soprano of the brasses, with a tone brilliant and noble, but because It is so difficult to play has often to call upon its substitute, the cornet, to take Its place. The cornet was invented early In the lfltii century, and was a devel opment from the old keyed buele. The French horn Is the alto of the brass family, and If It were uncoiled it would measure 17 feet in length. It Is the most genial of all Instru ments, and it blends well with either wood wind or brass, having a roman tlo quality of tone. even, full and mellow, which has made it a favorite wnn an composers. In the middle ages the trombone was called a sackbut," which is a Moorish word, meaning a "pump." If you rememoer this you will at once recognize the trombone player. Of lofty dramatic power, it should be reserved for great occasions, for it can produce an almost superhuman effect. Mendelssohn said: "The trom bones are too sacred for often use." The tuba was invented In 1835 and has the deepost tone of the brass choir a voice noble and dignified. The percussion instruments will be the subject of tomorrow's talk. Odds a$ Ends 1 . i Mi LILIAN TlNliLK. EVEN for a family of two and. of course, even more so for a larger family the establishment and correct treatment of an economival "stock hut will also aid In obtaining "savory the possible waste of odds and ends, but will also aid In obtaining savory flavory" soups, gravies and sauces and stews. Indeed, the use of well-flavored stock. Instead of plain water or milk, Is one of the points that has given uront reputation to French cookery. Hut the making and use of stot-k calls for "Judgment." You must by no means put in "any old thing." and you must know how to develop what you take out, so that "character," color and flavor, as well as good sea son inn. result. As a very simple example, take fish stock. Suppose in preparing a slice or two of fish for a small family you remove the skin and as many bones as possible before they reach the individual plate. No one wants kin and boms. In fact, they are one of the chief reasons why some men folk will tell you they don't care for fish. The fish caa be baked or fried In neat pieces or "filets" that leave no waste on the plate or the skin and bones can be cooked with the fish but carefully left on the serving dish. The former is the more attractive and useful method and gives better stock, though It Is a litUe more trouble some to do. The skin and bones contain rood ge'.atinous nutriment and the bits of flesh adhering will give flavor. Put them on In "water to cover" and boll until you have some concentrated, well-flavored stock, then strain. This can be cooked at the back of the range or over the gas simmerer, so that the cost of fuel is very small. Next day (or even the day after), in cold weather, you can have a very good, easily made, and very econom ical "stick-to-your ribs chowder as your main dish for luncheon or sup per, and no one need think about left overs. For each person you need to allow a good slice of onion, finely chopped (more or less to taste), about cup finely diced raw potato,' cup good fish stock (with a few flakes of fish It available), about V cup milk and a teaspoonful or so of finely cut-up salt fat pork. (I'll speak again of that salt pork) or other fat, and a little thickening. Try out the pork, cook the onion In It until yellow, add the cut-up potato, stir well for a moment, then put in the strained fish stock and cook until the potatoes are tender but not mushy. Now thicken very slightly with a little smooth flour and cold water or corn starch and cold water. raise to boiling point (or leave un thlckened If preferred) and add the milk and seasonings. Do not actually boil after the milk is in. Color, tex ture, and flavor of any cream soup are usually better it the mixture is kept Just below boiling point after the milk is added. Many people prefer a fish chowder made this way, to clam chowder, and it is Just as nutritious. The addition of an odd end of tomato with the potato will give you a "Ithode Island chowder." A little finely chopped parsley or celery leaf is another op tional garnish. The stock from the skin and bones and odd flakes of a pound of salmon or halibut will usually yield enough stock to make chowder for two ordi nary servings or one very large serv ing. Of course a little extra milk can be added If necessary. Ion't for get carefully seasoning before serv ing. RACE DEMURRER BASIS Arraignment or Mrs. Wurtzbarger to Develop Point of Law. A delay of 24 hours in the arraign ment or Mrs. Alma Wurtzbarger. charged with the murder or her hus bnnd on the Chemawa Indian school property" September 4, was granted by Judge Bean yesterday in order to permit Bert E. Haney to prepare a demurrer. The arraignment will be made today, and Mr. Haney will file a demurrer, in which he will contend that the federal authorities have no Jurisdiction In the case. He will base his demurrer on the theory that the United States courts have no Jurisdiction over the Chem awa Indian reservation when the per sons involved in criminal matters are all whites.
