The market was active throughout the day

were sold at a dime over the prevailing
market.

of the bureau of markets:

ruled her. today. The decline of zc In
quotations not only failed to stir up any
bu4tnass but appeared to keep buyers off the
market with tha Idea of getting cheaper
goods in the future. Dealers expressed much
dissatisfaction with present conditions and
took toward an increase in production ss
about the only steadying infiuenoe to, be
hoped for In the near future. Cars ef een
trallsed were more In evldenee and sales

New York The market today waa some
what unsettled the early part of the day
and trading was transacted on tbe basis of
CV for 82 score butter, but with advices of
that aha might spread the smelt season
over the year by preserving; a supply
for future use.
The very easiest way of dealing; with
a quantity of smelt, not wanted for Im
mediate eating-, is to put them down In
salt as follows:
Salt smelt for future use Take the
perfectly fresh smelt Just as they come
without cleaning;. Pack them Into a keff
or stone crock of suitable sise. nuttiner
a layer of coarse table salt, or fine rock
salt on tha bottom of the keg, then a
layer of fish, then a sprinkling; of salt
until the container is nearly full, sprink
ling salt on top and covering with a
weighted board or plate so that the
fish may be kept well below the brine
that forms la a few hours. The im
portant points to remember are: First,
the fish must be perfectly fresh; sec
ond, they must be completely covered
with brine. A little, strong brine can
be added If not enough forms naturally;
third, the keg; or crock must be kept in
a cool place and inspected from time
to time, so as to be able to forestall
spoilage.
This method, you see, takes care of
any amount of smelt quickly with very
little labor. The next thing is to con
sider the uses of the salted smelt.
1. They may be drained from the
brine within 12 to 36 hours and either
cooked at once or strung on a string for
drying or smoking.
2. They may be kept In the salt for
several months under favorable condi
tions. When wanted for the table they
can be freshened to any desired extent
by soaking in fresh water. They may
then be cleaned In the usual way and
baked as described below, or dipped in
batter or egged and crumbed and fried
in deep fat. or creamed (after boiling)
or used for chowder.
They are particularly good if mari
naded for an hour or so (after freshen
ing) In French dressing with a slice of
onion in it. then rolled in flour, then in
egg and sifted crumbs, and cooked about
three minutes In deep fat of the same
temperature . as for doughnuts. Fresh
smelt may be similarly treated and are
superior to smelt fried in the ordinary
"frying pan" style. Less fat is used
actually by this method than In shallow
frying and the fish are neither dried up
nor greasy.
If you like boned, fried smelt, leave
the heads on (removing, of course, eyes,
gills, etc), and put the tails through
the eyes, so that the fish when fried
looks like a nice brown doughnut. Then
when it comes from the fat cautiously
pull on the tail and the tail, backbone
and head can all be removed together.
This Is much easier for some reason
when the fish is curved than when it
is straight.
3. After 12 to 24 hours the slightly
salted smelt may be used for canning.
After thorough draining and 'cleaning
in the usual way they may be quickly
dipped into boiling water (to shrink
them) or may be packed directly into
the Jar. Salted water, or tomato pulp
from canned tomatoes may "be used to
fill up the jar. Pint jars are best as
the heat penetrates more quickly, and
as this size is usually enough at one
time for a small family. The Jars should
be set on a rack In a wash boiler with
the hot water one inch above the tops
of the not quite tight lids. Boil two
hours for pints or three hours for quarts
counting from the time boiling actually
begins. Remove the cans, tighten the
lids and cooL They may also be canned
in oil or In mustard dressing something
like sardines.
Even when fresh smelt are to be
canned they are generally Improved and
are usually less likely to be mushy
when cooked if they are sprinkled with
salt and allowed to' drain for an hour!
or two before being canned.
Smoked smelt may be prepared in a
regular smoke house or in a "back yard
smoke house" made out of a barrel or
large packing box. Hard wood should
be used for smoking. Usually the fish
will be ready to smoke 24 to 36 hours
after salting. The fish should be
cleaned before smoking but it is con
venient to leave the heads on so that a
wire can be run through them when
the fish are hung up.
Dried or smoked smelt will keep al
most indefinitely if protected from in
sects. They are good broiled, or soaked
and creamed. Creamed they are a good
Inexpensive substitute for chipped beef.
Another way of securing a smoked
flavor and preserving the fish is to
brush them carefully all over with
smokene or "liquid" smoke (or dip in
liquid smoke) after salting, cleaning
and draining. Then string on a wire
and let dry to a leathery consistency
For keeping a short time spiced or
pickled smelt are excellent. Clean the
smelt (using a pair of scissors for quick
work) cut off the beads and pack like
sardines head to tail in a baking dish
with a slice or so of onion and lemon, a
sprinkle of salt and one or two cloves
tucked In here and there. A bit of bay
leaf and a few peppercorns may be used
if liked. Cover with weak vinegar (or
diluted strong vinegar) and bake about
20 minutes or until the backbones are
loose when tested. Serve hot with
piquante sauce or cold with salad dress
ing or bone and mash and use with but
ter for a sandwich paste like sardines.
Cooked In this way they will keep in
a cool place for a week or 10 days.
They will keep even longer If covered
while tn the oven with a layer of melted
butter. This keeps out the air and
can be utlliied eventually In the sauce
or sandwich paste.
Another quick, method of cooking Is
to bake them In milk or tomato pulp.
Prepare as above but roll In flour be
fore putting Into the baking dish, and
cover with milk or tomato pulp and add
a tablespoon or two of butter. The flav
nrlnn mentioned above may be used.
but the lemon must, ef course, be
omitted, and the salt added Just before
serving. Bake about 20 minutes and
