VAUGHN'S SPECIAL RECIPES : As announced by Mrs. Vaughn, the recipes for Boston brown bread and chocolate pie demonstrated by her yesterday at the Ores;on1an Better Foods. Better Homes School are given below, together with some other Interesting recipes submitted by her. BOSTON BROWN BREAD. 1 cupfuls cream commeal. 1H cupfuls graham flour. 1 teaspoon ful salt, 1 teaspoonfuls soda. cupful sorghum molasses. 1 cupfuls buttermilk, 1 tablespoonf ul melted crlsco. Sift together dry ingredients, add molasses, buttermilk and crlsco. Put In one- Eound molds, well criscoed. and steam in tireless cooker for three ours. Remove from can while hot and place on wire trivet to cool. IN'DIVTDTWT, LEMON PIES. Filling: 3 tablespoonf uls crlsco. 8 eggs. 1 Vj cupfuls sugar. 1 lemons, 1H cupfuls milk, 6 tablespoonf uls floor, i teaspoonful salt. Cream crlsco, beat egg yolk, add i cupful sugar to each mixture, then beat the two together. Add Juice of 1 Vi lemons and a small quantity of the grated rind. Stir milk Into flour until smooth, add salt. Add this to first mixture. When thoroughly blended fold in . whites of 3 eggs beaten dry. Line 1 dozen Individual tins with flake pastry. Pour In lemon filling, place In hot oven. Reduce heat when crust begins to brown and before the filling bolls. Bake until firm in the center. CHOCOLATE PTE. cupful flour, 2 cupfuls milk, 4 tablespoonfuls grated chocolate, i cupful sugar, 3 egg yolks, H teaspoonful salt, 1 teaspoonful va nilla, speck cinnamon. Mix flour with 1 cupful cold milk, scald re mainder of milk, add to flour mixture and cook 20 minutes in double boiler. MeTt the chocolate, add half the sugar and add to flour and milk. Beat egg yolks and add remaining sugar and salt. Pour cooked mixture over eggs, return to double boiler and cook few minutes. Pour Into baked pie crost. cover with znerlngue. brown In oven. Serve cold. SACCE FOR MELBA TARTS. To the Juice from one can of fruit add 1 cupful sugar and slice of lemon, boll until a thick syrup.
