VAUGHN'S SPECIAL RECIPES: As announced by Mrs. Vaughn, the recipes for Omelet. Cocoa and Cream Icing demonstrated by her yesterday at the Orenonlan Better Foods, Better Homes School are given below, together with some other Interesting recipes submitted by her. OMELET. Four eggs. H teaspoonful salt. 1-16 teaspoonful pepper, pinch of paprika. 4 tablespoonfuls hot water or milk, 1 tablespoonf uls cnsco, taespoonful cream tartar. Separate eggs and beat the yolks; add salt, pepper, paprika and gradually water or milk (water makes tender omelet). Beat whites until dry and stiff. Add cream of tartar and cut Into the yolk mix ture. Heat and brush with crlsco the omelet pan and pour in mix ture. Place on range where It will cook slowly and evenly. When well puffed and delicately browned underneath, place omelet In center grate of oven to cook on top. When firm to touch, omelet to cooked. Fold and turn on hot platter. Garnish with sprigs of parsley. COCOA. One quart milk. 1 cupful boiling water. 4 tablespoonfuls pre pared cocoa. 4 tablespoonfuls sugar. Scald milk, mix the cocoa and sugar, add enough of the hot water to form a thin paste. Add the remainder of the water and boll one minute. Pour Into the scalded milk and beat with an egg beater two minutes. WHITE CAKE. Three cupfuls flour, 8 teaspoonfuls baking-powder. 1 teaspoon ful salt 4 cupful crisco, lv, cupfuls very fine sugar. l cupful strained orange juice. 1 tablespoonf ul grated orange rind. V4 cup ful cold water. 1 teaspoonful orange extract. 6 egg whites. Sift flour, baking-powder and salt four times. Cream crlsco and sugar, add orange Juice and rind and alternate water and dry ingredients. Add extract. Lastly fold In whites of eggs. Bake In laer tins In oven 350 to 400 decrees 20 minutes.
