Link Will Be tTsed. Ia Center and Madras Are in the Field Also. "The manufacture of starch may be come one of the leading industries of the Pacific Northwest in the next few years. The first step has been taken in this direction, which opens up a new outlet for the disposal by farmers of their surplus crops of potatoes and particularly of the small sized tubers th?t otherwise would go to waste. - -V farmers" and manufacturers' co operative association is being formed and the first unit has been established at Ridg-efield. Wash., where a com bined potato starch factory and fruit and vegetable drier will be constructed for operation this season at a cost of wbout $30,000. ' The people of Ridgre field have donated ground for the pur pose and work on the building will start within a week. ' Starch making is an absolutely new industry for the Pacific Coast. Prac tically all the starch consumed in the United States today is made in Ger many, and It costs the American peo ple millions of dollars. If all the cul tivated lands in Oregon and Washington-were planted to potatoes and con verted into starch the supply would not meet the domestic demand. One-third to one-half of the potatoes crown in the Northwest now are fed to hogs or allowed to rot on the ground. These "culls" are as good as the larger commercial sizes for starch ' making, and the farmers can turn them over to the factory when the price Is less than 60 cents a hundred, or put them on the market when the quotation is higher than that figure. Food Product! Varied. The field for food products from trie potato is almost unlimited, but chief amon; these, aside from starch, are potato crisps, potato flour, Saratoga chips and the pulp which is left after the starch has been extracted, and vhioh can be made into poultry and stock food. The potatoes of the Pacific North west, it has been proved, are superior to those grown elsewhere in this coun try or in Germany for starch making. The new process of fruit and vege table evaporation, which will be car ried on under the same roof at the Kldgefield plant, was patented by George B. Link, of this city. Almost every kind of vegetable and fruit can be preserved by this pro cess, and restored to their original state by merely soaking in warm water for a few hours before cooking. The new enterprise is not a stock selling scheme. The company is work ing to co-operate with the farmer, who will receive his proportion of the profits of the industry. He will put in no cash, but will donate a certain per cent of the first year's crop of po tatoes to defray the cost of construct ing the plant, and the plant will then be turned over to the farmers, or the Farmers' Commercial Club, as the Ridgefield organization will be called, clear of all incumbrances, and the profits derived from the industry will be divided pro rata among the active members of the organization and those pooling their crops for starch making or other by-products, of the factory. John F Griffith. Organiser. The Ridgefield unit of the system was organized by John P. Griffith, a practical farmer of that district, who is an expert on fruit evaporation. George 12. Link, the inventor of the evaporating system, is a. resident of Portland and for years has made a spe- - ial study of heat and furnace work. A. J. Salisbury, the secretary and man ager of the company, is also a resident of Portland and is at present employed in the health department as an in spector of ventilation in factories, large buildings, theaters, etc. - The Ridgefield plant will be con structed by August Schaefer, of this t'ity, who has had much experience in erection of starch factories in Ger many. Business men of La Center, Wash., and Madras, Or., are also seeking to have plants established at those places. The Madras people guarantee at least 10,000 acres of potatoes and agree to furnish uil the capital needed for the business. PEDAGOGUES PLAN TRIP .tit Special Train Will Carry Teachers to Monmouth Saturday. The Portland Educational Associa tion, composed of the teachers of the graded and high schools of the city, is planning to make an excursion to Mon mouth Saturday. The pedagogues will Jeave the city by special train at 8 A. M. from the Union Depot, going by way of Kewbers and Dallas, and will stop at many points along the route. J. H. Ackerman, president of the Monmouth Normal School, will enter tain the visiting teachers, and the State Normal School will be in session all Saturday for the special benefit of the Portland teachers.
