SO far the reduction on the wholesale prices of poultry does not make any very great difference in what the house keeper has to pay for her Sunday chicken or turkey, though both are a little cheaper in some places. For' roasting chickens 18 and 20 cents seemed to be the average price, and 25, 274 and 30 cents per pound for turkeys. Some particularly fine plump Oregon turkeys were to be seen. Don't forget the value of Crisp "bacon curls-' with roast chicken. They make an acceptable garnish, Improve the flavor of the fowl, and In the hands of a good carver and economist, help to make one bird do the work of two without anyone noticing It. To those who are always in search of a new entree, I may commend a Chinese dish tasted a year ago, but still remem bered with pleasure. It consisted . of wafer thin slices of poultry giblets, served in a rich brown sauce with slices of stewed Winter pears. The r miblna tlon may sound rather startling, but was distinctly good and would make a novel patty or tunbale filling. In the fish market were some very fine black bass, some unusually large, at 25 cents per pound, and some about 6 Inches long. Just right for frying. There was striped bass alao at 2T cents. Catfish and salmon cost 15 cents: halibut, smelt, flounder, sole, and perch were 124 cents per pound. Hard-shell clams cost 5 cents per pound and razor clams 15 cents per dozen. Clam chowder is a greatly ap preciated luncheon dish these fine Au tumn days. Lobsters were scarce and small at 25 cents per pound. Crabs cost 20 and 25 cents each, and frog legs 35 cents per dozen. There was a good supply of nice-looking red raspberries at 25 cents per box, and large strawberies, fom 25 to 30 cents. Some of the cranberries seen were not very good, but quite seatlsfactory ones were obtainable at two quarts for 25 cents. Huckleberries cost 10 and 15 cents per pound. Other grapes cost 50 and 60 cents per box and are much less plen tiful than they were. I saw some very large Japanese per simmons at 40 cents per dozen, which is distinctly cheaper than they have been so far. Peaches also cost 40 cents per dozen, large oranges 75 cents, and the new crop rather small grape fruit, good for mar malade, 50 cents per dozen. Apples cost from $1.50 to $4 per box, according to kind, and good pears were to be had at 25 and 35 cents per dozen. Ground cher ries are now 10 cents per pound. Quinces come about four for 25 cents, and cante loupes are about the same prices. A few surviving watermelons are still wedged In between the pumpkins and the big Hubbard squash. Hothouse cucumbers are now in, side by side with outdoor ones. The former cost about 10 cents each, the others are two for 5 cents. Brussells sprouts, wax beans, green beans and egg plant all cost 15 cents per pound. Green peas are now 20 cents per pound and green corn 30 cents per dozen. French artichokes were 12V4 cents each and okra 20 cents per pound. There were fine cauliflowers at 10 and 15 cents each. In the pursuit of new salads many cul Inery sins are committed, and there is a tendency to forget the charms of sim plicity, and the artistic and hygienic ad vantages which a crisp green salad has over its sometimes too rich and compli cated namesakes. Much can be learned from the French In adding the small touches that make one lettuce salad to differ from another- in glory, though all are good. Head lettuce, hothouse lettuce, watercress, endive, young onions, mint, parsley, green peppers, celery leaves and fresh radish leaves are some of the ma terials with which these "poems in green" are accomplished, and all are to be had in abundance at present.
