MACHINE MIXES BREAD.
Six ilarrels of Flonr Kneaded In Ten
Minutes, Inventor Bays.
A Boston machinist has made possi
ble tho mixing of bread by machinery.
With the machine Invented by Louis
CouuhoiT six barrels of flour, It Is said,
can be mixed and kneaded In tho rec
ord time of ten minutes. Six barrels
of flour arc as easily mixed, and knead
ed as one by this machine.
The new machine Is considered n
marvel In Its Hue, and It Is expected
by the Inventor that within a short
time ho shall have perfected tho ma
chine to such an extent that ten bar
rels of flour can be mixed and kneaded
nt one time.
The machine Itself occupies little
space four feet by ten feet. It la
mntln of steel. The nower used Is steam
or electricity transferred by means of
belts. A lnrge pan varying In size
forms the center. In this pan a big
wooden shaft thumps up and down In
Its process of mixing the bread, luto
this pan after the mixing Is placed an
other Implement by means of which the
bread Is thoroughly kneaded, the mix
ing requiring but threo minutes nud
the kneading seven minutes.
The machine Is arranged In such n
manner tlint while both operations are
made, yet both mixing nnd kneading
aro Independent of each other. To
facilitate matters there Is a largo door
In the bread pan through which the
dough ready for tho oven Is taken, It
coming out In a well-formed mass. It
Is claimed for tho machine that the
libers of tho flour aro not broken by
the mnchlno nnd that a heavier weight
of bread Is secured from tho same
nmount of flour. By tho old process
thirty-nine loaves were secured from
twenty-flve pounds of flour. By the
new process forty-eight one-pound
loaves aro made.

In Hanover. Germany, some eighty
years ago. When n mere noy no snow
ed signs of ability as an engineer nud
machinist. Ho learned theso trades In
n locomotive shot) In his own country
and when lu his 20's embarked for
America.
Being a persevering nnd naturally
ambitious man, his services wero In
donmnd, nnd ho worked for some or
tho best mnchlno companies. In addi
tion to being a gooil machinist Mr.
Cohnhou Is n patriot, nnd when the
Civil War broke out ho offered his
services as .an engineer to tho govern
ment, an olTor that was readily accept
ed. Tho good old wooden man-of-war
Minnesota, now lying In our harbor,
wns 0110 of tho best ships of tho line
during tho Civil War, nnd ho was as
signed as engineer aboard this frigate.
It was while serving In this cnpaclty
that the great nnvnl battle' at Hninp
toif Itoads took place. Tho wooden
vessels, tho Cumberland, tho Minne
sota nnd other vessels, wero engaged
by tho Ironclad Merrlmne, nnd the
Union fleet wns saved from destruc
tion by the monitor. During this en
gagement Mr. Cohuhoff was hit by n
bullet, which grazed his right tomplo.
