During Grape to Table Weekend, May 23rd-25th, wineries of the Co- lumbia Gorge will be showcasing the food-friendliness of their wines through tasting, educating visitors about ideal food pairings, and pro- viding some great recipes for pa- trons to continue the celebration at home. The weekend is a kick-off to tast- ing room summer hours, countless wildflowers, incredible weather and endless fun in the Gorge. Creating food friendly wine be- gins in the vineyard before the vines are even planted and contin- ues all the way through bottling. It starts by selecting an appropri- ate vineyard site for the intended variety, one where it will ripen com- pletely, but also not ripen before it has had ample time to develop a complexity of flavor.
