‘Holy Broke’ at Trillium Feb. 6
Hood River native Kent Ueland has a new solo project
called The Holy Broke, and he returns to the Trillium
Cafe on Friday, Feb. 6, promoting a new album “Do It
Yourself,” which will be released next month. Since Ue-
land’s band The Terrible Buttons went on hiatus, he
made a trip to Minnesota to record with friends and local
musicians to create songs that “take a turn down a decid-
edly dirt road, both literally and metaphorically.” Trilli-

Fields of May play Jan. 24 in CL
Stevenson-based band Fields of May will play at Thun-
der Island Brewing in Cascade Locks on Saturday, Jan.
24, from 6 to 9 p.m. Band members include Dennis Mor-
gan, lead guitar and vocals, Julie Mayfield on guitar and
vocals and Jon Bennett on percussion. Expect old timey
and western, country blues and a bit of jazz. Thunder Is-

Freshies Bagels and Juice opens on Oak

Matthew Joyce opened
Freshies Bagels and Juice
on Nov. 1, 2014 — without
any previous knowledge of
baking — and business is
booming. Located in the for-
mer Hood River Bagel Co.
store, earnings are up 25
percent over the last eight
months than in all 12
months of the previous
year.
As a sign outside the
store recently touted,
“Gluten Rules.”
Joyce is a familiar face in
downtown, having run the
Juice Bros. food cart for a
couple of seasons. He pur-
chased Hood River Bagel
Co. last year to move his
business indoors.
He doesn’t miss the food
cart — his new digs are
much more spacious — but
he does plan to bring it back
this summer (and sell tacos),
parked in the courtyard in
front of Freshies. It’s a space
that’s underutilized, Joyce
said, and he intends to get
rid of the picnic tables and
replace them with café ta-
bles and umbrellas. New out-
door lighting will illuminate
the space, and a bamboo
fence will create a cozy en-
closure for patrons.
But that’s what he calls
Phase 2. Right now, he’s in
Phase 1 — moving into the
shop, lear ning to make
bagels and manage a staff
of seven employees, redoing
the menu and tackling inte-
rior projects.
And yes, there is a Phase
3: obtaining a liquor li-
cense.
For now, however, he’s
taking baby steps. “I believe
in doing a few things well
than a lot poorly,” he said.
He didn’t know how to
make bagels before pur-
chasing the shop — but
then, he didn’t know any-
thing about juice before
opening Juice Bros., either
— and, after signing the pa-
pers, immediately flew back
to an east coast bagel shop
for a crash course.
On the east coast, “if it
has a hole, it’s not a bagel,
it’s a doughnut,” Joyce said.
His bagels are in that tradi-
tion: Chewy, yet fluffy, with
a golden sheen.
Joyce brought in all new
recipes when he took own-
ership. He’s currently sell-
ing seven varieties, with
plans to add more in the
coming months: plain, salt-
ed, sesame, cinnamon-
raisin, asiago cheese, onion
and everything. He’s also
tweaked the cream cheese
recipes, which are mixed
onsite and include veg-
etable, strawberry, jalapeno,
and garlic and herb.
Joyce makes bagels fresh
each morning beginning at
4:30 a.m., opening his doors
for business at 6:30. His
breakfast sandwiches are
popular items, and he also
serves sandwiches at
lunchtime, with plans to
eventually offer soups and
salads. He roasts the turkey

and thinks his 8-foot by 8-
foot oven is underutilized;
he’d like to do more baking.
“I take quite a bit of pride
in creating something deli-
cious,” he said.
The bagel side compli-
ments the juice and smooth-
ie side of the shop — people
will pop in for a bagel, and
end up purchasing a juice
or smoothie as well when
they see the menu. Popular
juices include the Red Eye
(beet, carrot, lemon and gin-
ger) and the Cold Buster
(apple, lemon and ginger,
steamed).
He also serves coffee and
espresso drinks, with beans
from local Stoked Roasters.
He tries to incorporate
local and organic produce
into all of his products. The
grain he uses comes from
cooperative growers in Ore-
gon and Washington, and in
the winter months, local ap-
ples play a big part in his
juices.
One special note: A bag
(one do z en) of day-old
bagels sells for $5.

‘One Small Hitch’ screens Jan. 28
T he romantic comedy
“One Small Hitch,” directed
by John Burgess, comes to
Columbia Cetner for the
Arts, 7 p.m. on Jan. 28.
Meet Molly Mahoney
(Aubrey Dollar) who is flying
home to Chicago for her
mom’s wedding and bringing
a “Mystery Man” home to
meet her family. When she
discovers this Mystery Man
has a Mystery Wife, she
dumps him at the curbside
check-in. She ends up crying
on the shoulder of childhood
friend Josh Shiffman (Shane
McRae), who is flying home
for the same wedding. Emo-
tionally drained, Molly pass-
es out in Josh’s arms just as
he gets a phone call from his
parents. Josh learns that his
father is dying and his only
regret is that he will not get
to meet the woman who will
one day become his son’s
wife. Desperate to fulfill his
dad’s final wish, Josh claims
that his dad has already met
that woman — his close
childhood and family friend:
Molly Mahoney. Comic com-
plications ensue, framed in a
deadly combination Catholic
guilt and playboy charm.
Runtime: 1 hour, 45 minutes
