But starting a brewery and canning some of the new brews wasn’t enough for Snyder. He also created
a barrel aging room inside the Public Coast. The barrels originally held pinot noir from the winery that also
supplied the private label wine offered at the Stephanie Inn, another property operated by Martin North. Now
Leroux’s Blonde Ale is in those barrels. The first tasting came after the beer had been aged six months; it’s
now aging another six months.
“We’re going for depth (in flavor),” Snyder said. That depth is created by the elements of the wine left
on the barrels’ wood and from the barrels’ expansion and contraction from changes in the room’s
temperature.
So far, the response to the aged beer is good.
“People have loved it,” Snyder said. “There’s a group of connoisseurs that is very intrigued by barrel
aging. The beer is a lot heavier, a lot richer and a lot deeper. For some, it’s an acquired taste.”
With the opening of the Pelican Pub in Cannon Beach a year ago and the ongoing brewery at Bill’s
Tavern, it’s an “extremely positive time for beer in Cannon Beach,” Snyder said.
The future is pretty bright, too, he added.
“Our aspiration – our mission – is to create really memorable beers that people want to come back to
taste,” Snyder said.
