bard boiled egg. Sprlokle over these
aome chopped paraley. pepper and aalt
Repeat theae layer till the dlb I full,
then pour In the rold water. Put on
the lid of paatry. Decorate It with
learea of pastry, glaae It wltbjbeaten
egg and bake for two boura la a quick
oven to begin with and then In a
cooler. When It la done lift out the
center ornament and pour In the atock
made from the bonea.

For a brown atew cut the cooked or
nncooked meat In pieces, roll them In
flour and fry them brown In dripping.
Then tnrn in hot water and boll until
the meat la within fifteen minute of
being tender. . Add potatoe cut hi

a sweet red pepper or two prepared

tomatoe. Season with aalt, pepper
and a little paprika.
Clam Fritters.
The follojvlug batter la excellent for
clam fritter: 81ft a pint of flour with
a teaapoonful each of aalt, augar and
cream of tartar and balf a teaspoonful
of eoda. Add a tableepoonful of melt
ed butter, one egg and balf a pint of
milk. Mix the flour, augar, aalt, eoda
and cream of tartar together and rob
through a aleve. Whip the egg till
very light and stir 'ir Into the milk,
then beat It gradually Into the dry In
gredients. When the batter la emooth
atlr a very scant pint of chopped flam
Into It, taking car not to add enough
clam Juice to moisten tt too much. Fry
on a hot griddle.
Neapoltan Cake.
For neapolltan cake prepare two
cake batter, on white aud the other
yellow, and divide each batter Into two
parts. Color one half of the white bat
ter a beautiful pink aud leave the
other half white. Color and flavor one
balf of the yellow batter with choco
late. Bake each of the enkea in layer
form and when cold place the layers
together with a nice soft king flavored
with orange J a Ice. The yellow layer
mny be flavored with orange Juice If
desired and the white flavored with
vanilla or almond. The pink may be
flavored with etrawberry or rose.

One pound of pulverised sugar, on
pound of flour (very scant), three eggs,
two ounce of chopped citron, one ta
bleepoonful of cinnamon, one-quarter
of a teeanoonful of clove, one-quarter
of a teaspoonful of pepper, one-quarter
of a pound of chopped almond
meats. Rest the sugar and egg one
hour, then add the other ingredient,
the citron laat. Put to littler lump tn
greased pan. pake in .moderate oven.
