Guernsey enthusiasts would not of course admit that their pets have any defects at all, but they can at least learn what defects other people think the cows have. The stockman and dairyman de clared that Guernsey cows lack vitality. Next, they have defective udders, one sided, with crooked teats or teats too small and difllcnlt to get the milkout of. The udder is sometimes not large enough. Finally, they do not give as much milk as they ought to, considering how large they are. But, on the other hand, Guern sey enthusiasts declare, that they make excellent, siieable beeves. Perhaps that is the reason they do not give such k quantity of milk. At any rate, whatever the defects in the Guernsey breed, these, defects can every one be bred out of them, as the defects of the Jersey breed have been. Purity was one of the premium best fire cows at the World's fair and is New York Gnernsey. Qoa In For SWrlllilnj. Mr. O. B. Lawson of Grinnell based his arguments in favor of sterilizinguiilk and cream upon the two facts that sour ing of milk is due to bacteria, aud that heat will kill the bacteria. As to the method, he said it should be heated in open pans and constantly stirred so it will not have a cooked taste. lie thinks milk would be much iuiproved by run ning it through a separator without creaming it, the object being to purge out impurities. He showed a method by which creamerymen can run private milkmen out of the business, or rather absorb their business as they do that of the home churner. It is by sterilizing milk and shipping it to the city market. The cows can be milked in the morn ing, the milk taken to the creamery and sterilized before noon and shipped next morning. This would take that trade out of the hands of private dairymen, the creamery doing the work by whole sale. In sterilizing cream equally marked advantages are gained. One quiirt of sterilized cream is worth two quarts of nnsterilized cream for the manufactur ers of ice cream. Ice cream makers say that it "swells" in making up. - Cream is better for this purpose when 24 hours old than when fresh, and he has kept it from Tuesday until Friday aud found it in prime condition. Butter made from sterilized cream has brought him a cent a pound abovo the highest quotations. He sent some to the World's fair Bnd it scored as follows: Flavor, 42; grain, 25; color, 15; salting, 10; package, 5; total, 97 being three points off in flavor, otherwise perfect. This is convincing proof that sterilizing does not hurt the grain nor destroy the flavor, for it was still marked high, Mr. Lawson1 l'spajjer called attention to a starter must always be the fact that a starter must always added to sterilized cream to ripen it, as the bacteria have been destroyed by the heat. He is satisfied that thousands of dollars wonld be added to the value of Iowa butter by sterilizing cream. Address Reported in Creamery Journal. The Winter Cow. A writer thns describes the cow for Winter dairying: She should come in fresh Nov. 1, should be from 1 to 9 years old and weigh anywhere from 1,000 to 1,800 pounds. She must be a hearty fetder, with barrel rib, giving plenty of room for breathing and digestion, must also have a large udder and full, round teats. Her daily yield of milk should not be less than 30 to 60 pounds, and that milk should make from 1 to 2 2-10 pounds of butter a day for nine months at a stretch. The World'! Fair Dairy Teat. The Breeder's Gazette says of the World's fair dairy test: The Jeroeys sweep everything. They have 18 out of the first 25 places. And, finully, it re mains to be stated that as a result of the Columbian dairy test the 14 pounds a week cow is worth a great deal more than she was before the test was Instituted.
