CORN MEAL ECONOMICAL FOOD
Many Tempting Dishes May be Pre
pared at Little Cost
Corn meal, as compared with other
foods, is a low priced material and
may be used as the basis for many
appetizing dishes. The .white and
yellow meals differ somewhat in flav
or but are much alike in composition,
there being no difference in food val
ues. The following excellent recipes
are offered by Laura J. Cheney, of O.
A. C:
CORN MEAL PUFFS
1 quart milk; two thirds cupful
corn meal; 14 cupful sugar; 1 tea
spoonful salt; 8 eggs; grated nutmeg.
Cook the milk and meal together 15
minutes with the salt and sugar.
When cool add the egg wlel beaten.
Bake in cups. Serve with stewed
fruit or jam. -
SOUR MILK CORN BREAD
2 cupfuls corn meal; 2 cupfuls sour
milk; 2 tablespoonfuls fat; 2 table
spoonfuls brown sugar; 1 teaspoon
fuls salt; 2 eggs; 1 teaspoonwul Boda;
1 tablespoonful cold water. Cook the
meal, milk, salt, butter and sugar in
a double boiler for about ten minutes.
When the mixture is cool, add the
eggs well beaten and the soda dis
solved in the water. Bake in a shal
low iron or granite pan for about 30
minutes. ,
BUTTERMILK WAFFLES
3 cupfuls water; 2 cupfuls corn
meal; 2 cupfuls wheat flour; 1 cupful
sweet milk; 4 eggs; 2 tablespoonfuls
fat; 2 teaspoonfuls salt; 1 tea
spoonfuls soda; buttermilk or sour
milk enough to make a thin batter.
Cook the meal, water, salt and fat
together in a double boiler for 10 min
utes. When the mush is cool add the
well beaten eggs. Sift the flour and
soda together, add the flour and the
sweet milk alternately to the corn
mixture, finally add the buttermilk
and beat thoroughly. This mixture
is improved by standing a short time.
CORN MEAL PUFFS
1 quart milk; two thirds cupful
corn meal; V cupful sugar; 1 tea
spoonful salt; 8 eggs; grated nut
meg. Cook the milk and meal to
gether 15 minutes with the salt and

Sift all dry ingredients together and
work in the fat. Add enough milk or
water to make a stiff batter. ' Bake
about J3 minutes.
SUCTION CLEANER
The OHIO not only cleans
the rugs, carpets, wall coverings
and upholstered furniture with
little effort on your part, but it
also keeps the house so immac
ulately clean that the otherwise
weekly drudgery of houseclean
ing is entirely eliminated.
The positively-driven spiral
brush in the OHIO not only
removes all the dirt and dust that
you can see, but the almostinvis
ible destructive fine dirt as well.
Potato growing is an important in
dustry of Oregon and is generally a
profitable one. The acreage in pota
toes, however, and the average yield
per acre have been decreasing during
recent years, particularly in certain
sections of the state where the Boil
diseases have been especially preva
lent, for this decrease in the produc
tion of potatoes has been very largely
due to disease. The comparatively
rapid increase in the number of dis
eases affecting potatoes is due in part
to the continuous culture of potatoes
on the same land for. a period of sev
eral years. This unfortunate prac
tice furnishes excellent conditions for
the propagation of the common dis
eases and for the origination of new
ones.
It is fortunate that practically all
the diseases attacking the potato can
be successfully controlled by compar
atively simple and inexpensive meas
ures. It should be borne in mind that
the control of these diseases depends
entirely on prevention and jiot on
cure. If, for instance, a potato leaf
is infected with, late blight, it cannot
be curred of the disease, although the
spread of this disease to other leaves
or other plants can be prevented by
spraying properly.
Spraying In order to control cer
tain of the leaf diseases, such as late
blight or early blight, spraying of the
potato plants must frequently be re
sorted to. For this purpose Bordeaux
mixture has proved to be the moat
efficient spray mixture used, of which
the following formula is most fre
quently employed and is apparently
best for potatoes: Copper sulfate

(bluestone), B pounds; lump lime, 5
pounds; water, 50 gallons. This is
briefly and commonly expressed as
5-5-50 Bordeaux. A weaker solution,
such as 3-4-50, may often be used
with good results if it is thoroughly
applied.
Early Blight Early blight attacks
only the potato leaves, causing brown
spots thereon, which, as they enlarge,
develop concentric rings or markings,
producing a "target" effect. When
the spots are numerous, they kill the
leaves with a consequent reduction in
the yield of the potatoes. In contrast .
to late blight this disease develops
best in warm dry weather. It is not
serious in this state, but where pres
ent can be successfully prevented by
thorough and timely sprayings with
Bordeaux mixture.
Tip Burn Tip burn is a drying and
dying of the leaves, beginning at the
tips and margins and working in
ward. The leaves often roll, and be
come brown, presenting a scorched
appearance. This trouble is usually
most pronounced on light soils and
during hot, dry periods. If possible,
maintain an adequate soil-moisture
supply by irrigation or careful culti
vation. This disease can be largely
prevented by timely spraying with
Bordeaux mixture, due probably to
the shading effect which this spray
has on the foliage of the potato plant. '
