on one thing, if on no other. They all prohibit
the sale of alum baking powders.
There must be a good reason for this.
It Is because alum Vvas found to be un
henlthful. Royal Buking Powder is made of cream
of tartar, derived from grapes, a natural
food product, and contains no alum nor
other questionable ingredients.

Practical Advice to
Cream Producers
A communication from Seattle
says:
"Dairy insectors are
very strict."
"During the month of
of last year there were hundreds of
gallons of cream seized, eondeii.ned
and destroyed, both in Seattle and
Portland. It is impossible to make
wholesome butter out of spoiled
cream; and inspectors are going .to
see that all bad cream is destroyed
in 1910. They :nint that cream
must he delivered twice a week
during the warm weather, also that
it must be properly couled and

In that case the dairyman would
not only lose the cream, but if he
was a cream-shipper he would also
lose the express charges cn the
cream condemned.
"If cream is delivered twice a
week there is no trouble in having
top-grade cream.
"All utensils should be thorough
ly cleaned and seal Jed after each
time they are used. Warm cream
should be cooled before mixing it
with other cream. Cream should
have plenty of fresh air; this can
be obtained by placing a piece oi
cheese cloth over the top of the
can.
"In real warm weather the
cream-can should be placed in cold
water; the top of the water being
a little above the level of the
cream. ,
"There is one very important
thing that most dairymen overlook,
and that is the stirring of their
South, of Kange Nineteen East, ot
Willamette Meridian in Oregon.
