two ounea of butter lu a saucepan
with two talilespoonfuls of flour, ritlr
until blended, then pour In a half pint
or mors of clear broth, stirring until
smooth Rait to taate. add chestnuts
and simmer gently until soft
Kerr with roasted meats or poultry.
Deviled Chestnuts. Tak a quart of
chestnuts, remov tb shells and blsncb
the meats.
Dry thoroughly, then ptsc on th
fire In a saucepan and brown In bet
olive oil or butter. Hprlnkle with fine
salt and a dsab of csyenue and serv
at dlnlier after the cheese.
Dainty Sid Dishes.
Chestnut Kalad.-Tak a half dozen
chestnuts. Itvmova the shells, put Into
a ssueepnn of hot water and boll twen
ty minutes. Drain and plung Into
cold water until the skins loosen. Peel,
cut Into quarter and dust wltb salt
and pepper.
Peel four large aour apples, core and
rut Into pieces the slue of the nuts.
Cut some of the dark meat of a cold
roasted chicken, turkey or duck Into
pieces of the an me size and arrange on
lettuce leaves In the so lad bowl or In
dividual plntea.
Sprinkle with two talilespoonfuls of
chopped mixed pickles and dress wltb
a French dressing of oil and vinegar
and serv.
A Toothsom Sweat.
Chestnut Krlttera. Take a couple of
dozen chestnuta. Roast and akin these
and pound to a smooth pasta. Add
two talilespoonfuls of rice flour, one
tnblespoouful of sugsr and two tea-
spoonfuls of lemon Juice. Wulxk the
yolks of three eggs until light and
whip the whiles to a stiff froth with a
pinch of salt, yttr first the yolks,
then tho whites. Into the chestnut flour
and use a llttl thick cream to moisten.

which bar been well boated In boiling
water, and fry In smoking hot fnt
Drain on white paper and send to
table arranged In a pile, sprinkled
wltb sugar, ou a well beated dish.

These wholesome candies will please
the little ones quite as well as those
bought in the shops.
Nut Swsstmsata.
Cocoanut Halls. Take a pound of
loaf sugar and boll it In a gill of water
until It hardens when tested in cold
water, then flavor with rose or orange
flower water and stir into it sufficient
grated cocoanut to make it quite thick.
8bape tt Into balls, place these on an
oiled dish and leave them till hard,
when they should be quite firm outside,
but soft and semifluid Inside.
Marzipan. Take a pound of sweet
almonds and blanch these, adding two
or three bitter almonds If liked.
Pound them In a mortar till smooth,
adding drop by drop a lit tie rose or
orange flower water. Then stir, this
mixture over a alow tire with one pound
of sugar till it forms a smooth paste
which will not stick to the lingers when
touched. Dust a board with powdered
sugar, spread the paste thinly on this
and cut Into any shape or size desired.
Seasonable Sweets.
Christmas Kisses. Heat the whites ot
six eggs' until stiff. Stir In oue-hulf
pound of powdered or confectioner's
sugar. Drop this in teaspoonfuls on
oiled paper and dry In a slightly warm
oven for nbout forty minutes. Lift
from the paper and stick together in
pairs with a bit of white of egg.
Some of the kisses may be made b
adding a little melted chocolate to the
beaten egg nnd others by using a little
melted red elly to give them a pretty
rose tint.
lee Cream Candy. Take eight cup
fuls of sugar, two cupfuls of hot water,
one tenspoonful of cream of tartar, dis
solved In cold water, a lump of butter
flie size of an egg and two teaspoonfuls
of vanilla. Put the water and sugar on
the tire In a saucepan..- Sfir until dis
solved. When it begins to boll add the
cream of tartnr and let it boll twenty
minutes without stirring. Add the but
ter tit the last minute. When It hnrd-
ens in cold wnter it Is doue. Pour on
buttered platters, sprinkle with vanilla
and let it cool. Pull, drawing it out
Into sticks and cut with sharp scissors
the desired length.
