one-half cup rljte olives, atoned and cut
In quarters lengthwise; one-half cup
pecan meats, one head lettuce, French
dressing. Mash the cheese to a paste,
aud If necessary add a little cream.
Form Into tiny balls; mlx^ the nut
meats and olives and place In lettuce
cups; surround with the cheese balls
and udd the French dressing.

The ordinary way la to mix the mus­
tard with water, tempering It with n
little flour, hut such a plaster la simply
abominable. No water should be used,
but mix the mustard with the white
o f an egg aud the result w ill be a plas­
ter which will draw perfectly, but
will not produce a blister. The pre­
pared mustard leaves that can now lie
purchased cheaply, save much time und
trouble.

Add three egg yolks and aliout half-cup
white Hour and then whites o f eggs
beaten stiff. Put In enough more flour
to form a spongy mass so that you can
cut It with a spoon. Drop the dump­
lings In boiling soup and cook ten min­
utes.

Cut cold boiled potatoAi Into neat
dice. Make a cupful o f sauce by cook­
ing together a tablespoonful of butter
and one o f flour and adding to them
a generous cupful of milk. Put In ft
double boiler, add potatoes and simmer
for fifteen nilnutes. Season well with
talt and pepper and serve.

Make a batter of one egg, a quar­
ter teaspoonful salt, one good cup milk,
about threc-qunrters o f a cupful of
flour. Pure and cut apples In rounds,
throw them In the batter and fry lu

applications of Hordeaux mixture ren­
der It almost imperative that some
means be found of reducing thia Injury,
or that some spray be discovered which
may )>e used aa a auhatitute for Bor­
deaux.
For the past two or three years I have
observed, after winter spraying apple
und pear treee with lime-sulphur solu­
tions, for Han Jove scale, that the fruit
upon the sprayed trees waa lees "scab­
by” than that upon unsprayed trees.
Upon two different occasions thia winter
application waa delayed until the blot-
some were aliout to open and while the
spray, which was applied at the full
strength, did considerable injury at the
time, its decidedly beneficial effects
were noticeable when the fruit was
gxMiered. However the generally good
results which follow winter applica­
tions ot lime-sulphur are now well
known and this part of the work re­
quires no further comment.
Nevertheless, these observations sug­
gested to me the probability that lime-
■u'^'mr solution might be used aa a
sulj.altute for Bordeaux mixture for
summer applications and during the
past year 1 have ao used it upon vari­
ous plants for various purposes.
It is not proposed at thia time to go
at all into detail tegarding these ex­
periments— I wish only to call atten­
tion to aome of the results obtained
which show conclusively that lime-
sulphur solutions may he used as a
summer spray without injury to foliage
and also point strongly to the probabil­
ity that by its use apple scab may be
effectually controlled without danger of
epray Injury to the frnit.
Sufficient work haa not been done to
justify the statement that lime-sulphur
is equal to Bordeaux as a preventive of
tlila disease but the results of the single
season's work point eo strongly to this
conclusion that I feel juetified in call­
ing attention to them, that growers
who have suffered loss from Bordeaux
injury, and othera who are interested,
may make comparative tests of the two
sprays the coming season.
In oarrying out the work the past
season it became necessary first of all
to determine how strong a solution
could he used without injury to the
foliage. Thia, again, made it necessary
to adopt some method of ‘ ‘ standardiz­
ing” the spray. After uonsideiable
work we adopted what may be termed
the ''stock solution” method of prepar­
ing the epray and adopted as a stand­
ard for the work a "stock solution”
having a specific gravity of 1.27. (F or
determining the specific gravity of the
solution w hile at work in the field we
have found the specific gravity hydro­
meter a very convenient instrument.
I t is cheap, simple and convenient,
and we would recommend every grower
who expecta to use lime-sulphur aa a
summer spray to obtain one.)
This solution, similar to the Rex.
Niagara and Phoenix
lime-sulphur
sprays upon the market, any of which
would undoubtedly do as well, is o f ' a
dear, dark amber color, is without sed­
iment, and as stated above had a spe­
cific gravity ot 1.27. Analysis snowed
that each gallon contained in solution
2.38 pounds of sulphur.
During the season of 1907 these
"stock solutions” of lime-eulphnr were
need variously diluted npon the apple,
pear, peach, plum, prune, quince,
cherry, grape, potatoes and celery.
The results obtained indicated that
lime-sulphur rprays produced by d i­
luting 1 gallon of the stock solution
with 15 gallons of water may be safely
used upon' all of the above-named
plants, with the exception of the peach,
unless it may be early in the spring,
when very slight injury was produced.
For use upon the peach each gallon of
solution should be diluted w ith at least
20 gallons of water.
For the experiments with apple scab
a block of 400 Y ellow Newtown trees
were selected, because thia variety is
particularly susceptible to this disease
Hnd because this block was known to
be badly infested.
The entire orchard was sprayed with
lime-sulphur for Han Jose scale late
in February. The orchard was then
divided into two plats. One plat was
sprayed with Bordeaux mixture on
A p irl 20, May 8 and May 17. The
other plat was sprayed on the aame
dates with lime sulphur solution d i­
luted 1-15. Unsprayed trees were left
as checks in each plat.
A t picking time the fruit was care­
fu lly gathered, examined and separated
into three grades to show per cent of
frnit absolutely free from scab, slightly
scabby and badly scabbed.
