An English cafe of more than paaaing fame has on its staff a pro fessional turtle soup taster, who proves that the chef and steward are supplying the hotel with the purest grade of turtle soup. He also tastes for wholesale impor ters of turtles, for when a turtle is not imported alive, bnt is killed in the West Indies, the fesh is dried in the sun in long, leathery- looking strips.
