FOOD
From late May until the middle of
September, most of my time is spent
with the canning kettle, preserving
and freezing the harvest from our
garden For a small garden, it bears
more per inch than any other spot of
land 1 know Because I cannot and
will not throw anything away, when
not at the stove, I am searching
cookbooks and old recipes, trying to
find out what I can do with the
vegetables that have stayed too long
on the vine
We cannot eat everything that
matures all at once That leaves lots
of beans, peas, and squash past their
prim e, b u t fine for soups and
relishes
Over the years I have collected
quite a file of recipes for over ripe
vegetables and fruits. They take some
tracking down and experimenting
