Change Up Pesto with Amaranth
Scott Whitus, a chef formerly with Café Zenon, is recently back from
working at McCarthy Lodge in Alaska. He is now managing the kitchen
at Belly. He uses amaranth greens when they're in season in place
of basil in pesto, which was recently featured as a highlight on
a special dish of duck confit with chanterelle ravioli. Whitus
has used sprouted amaranth microgreens, and this year has
enjoyed seeing amaranth at The Kiva and Urban Redneck Farm.
Amaranth will be back in season next year, but if you happen
to see any around town, make sure to grab some of the herb.
“It’s a vibrant red, purple, burgundy color and it makes
your pesto that color,” he says. “Pesto is a dish that everybody
knows but with this it looks unique.” Taste-wise, it’s slightly
earthier than basil and can be used cup for cup in place of
the herb. Whitus uses a combination of amaranth, garlic, pine
nuts, lemon juice, balsamic vinegar, olive oil, salt and pepper. “People
have been loving it and it’s really unique to get that delicious flavor with a different color.”
