There’s much to be said about the artistry of cooking, but
for Guy Crosby, the science of food takes the cake. Crosby
is coming to Eugene on May 5 to share his perspective as
science editor for Cook’s Illustrated magazine, a regular fix-
ture of America’s Test Kitchen on PBS and co-author of The
Science of Good Cooking. With a Ph.D. in organic chemistry,
Crosby gets down to a molecular level when describing why
excess baking soda collapses cookies, or why fish poached
in water cooks faster than fish cooked in oil. At The Science
Factory’s “Scientifically Speaking Gala and Auction,” Crosby
will expound on the science of taste, explaining just what a
“super-taster” is and why those with sensitive taste buds
are pickier eaters.

Speaking,” a fundraiser for The Science Factory and Nearby
Nature, 5:30-9pm Thursday, May 5, at the Eugene Hilton,
