2 teaspoons cumin
2 teaspoons each ground white, red and black pepper
1 tablespoon paprika
1 teaspoon salt
1/2 cup garlic
1 cup orange juice
1 cup hard apple cider (Hescheles likes 2 Towns, made in
Corvallis)
1 cup brown sugar
1/2 cup molasses
1/2 cup balsamic vinegar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
1/8 cup Frank’s hot sauce
1 cup toasted, chopped pecans, optional (Hescheles omits
the nuts from the sauce at the restaurant because of allergy
concerns, but when he makes it at home, he includes them.)

“It takes a lot of time to make everything that goes into our
food,” says Chow owner Mitchel Hescheles, “and people can
taste it.”
Hescheles attended culinary school out of high school and
had a coffee house in Springfield years ago, before the renewal
programs encouraged the growth that the city now enjoys. He
admits that was a tough time to run a restaurant in Springfield,
but even after that closed, his goal was to try again some day.
Hescheles then joined the Army and was stationed at various
spots around the states and in Korea for three years.
His family was here, so after the Army he returned and
opened Chow two years ago. He also owns Moe’s Tavern,
located right next door. Chow offers burgers, sandwiches and
salads, but with a twist, such as zucchini fries, ham cooked in
Coca-Cola or candied nuts on a salad. Patrons can also enjoy
portabella carbonara, ratatouille or garlic-seared salmon. Meats
are sourced from Bright Oak Meats, located just blocks away.
Lots of restaurants offer a burger, but Hescheles’ approach is
a far cry from a piece of meat and a bun. While in culinary school,
he was taught to combine flavors in unexpected ways, which he
does, to great effect. For instance, his burger special, The Merry
Prankster, boasts blueberry mayonnaise, a Cajun-seared patty,
Swiss cheese, hot sauce, blue-cheese pesto, arugula and potato

chips. “It’s a lot of flavors,” he says, “but nothing overwhelms
anything else.”
Hescheles has become known for his brown-sugar crusted
bacon, which graces this Bacon Cheeseburger on Crack along
with potato chips (on the burger), housemade pimiento cheese,
cheddar and pepper jack cheese. “Our job is to create food
memories,” he says. “I hope that people will be tasting lots of
different things, and things they’ve never had before, and then
say, ‘Oh God, that was good!’” — Vanessa Salvia
Roast the jalapeño and poblano peppers. Place the peppers,
apples and seasonings through garlic in a food processor and
process until finely ground. It may be useful or necessary to add
the orange juice to the food processor and process with the
liquid until no chunks remain.
Place the seasoning paste and all other ingredients in a pot.
Simmer on low heat until thickened. The sauce may look a little
thin, but it will thicken upon standing.
To prepare the burger, spread the bottom of a ciabatta roll
with pimiento cheese. Sear the burger patty in some of the
sauce. Top the patty with cheddar and pepper jack cheeses,
bacon slices, more sauce and crushed potato chips.
